For those of you who don’t know him, meet Otto Kramm, baker and owner of @ottosbread in Salinas, CA. Otto’s journey in bread baking began in the fall of 2016 and grew from a hobby to a side gig to a full time career in 2021, all the while baking out of his apartment. In March of 2022 Otto took a pastry and Viennoiserie course @sfbakinginstitute to expand his baking skills. After another year of planning and 9 months of buildout, opened up his brick and mortar bakery in March 2024. Otto’s Bread Co. has developed a strong following in Salinas and the surrounding area of Monterey.
TMB Baking had the privilege of working with Otto to source and install much of his bakery equipment. For his deck oven, TMB recommended and Otto chose the @bassanina_baking_art Zoom 1212 with TMB-Supplied Touch Screen Control and Burner, also known as the Steelheart Gas Deck Oven. TMB has been working with Bassanina since 2012 to supply their gas deck ovens with our ETL listed touchscreen control and burner and has installations throughout the US. The Zoom 1212 with Integrated Loader provided the baking capacity, versatility and performance for Otto’s menu, including his highly regarded sourdough.
