👋 Hi, I’m Kristin—Owner and Baker in Chief at The Tiny Cookie Trolley, a new Denver-area cookie catering company specializing in bite-sized cookies in bold and unique flavors.
A little about me:
-I’ve had a passion for food my whole life—from loving food-shapes erasers and doughnut-print pjs as a kid, to baking birthday treats for high school friends and neighbors.
—I studied creative writing and worked in marketing/tech operations for eight years before deciding to jump ship to pursue baking.
—Since then, I’ve run a home bakery business, worked in catering, and even taught high school culinary arts.
Random facts you didn’t ask for but are getting anyway 😜:
-I’m a Colorado native…who’s never skied. (I’m more of a sit-by-the-fire-with-coffee-and-a-mystery-novel-type.)
-I’m half Romanian and have continued my grandmother’s legacy of making Cozonac (an enriched bread with a cocoa-walnut swirl) every Christmas.
-I love classic rock music, dark roast coffee, haunted historic buildings, trying new restaurants, and speaking in random accents. (British is my go-to.)
-I have two cats: Pippin (aka Pickle, Puff Puff, and Pip) and Swiss Roll (aka Dubby Dubby, Mimi, and Chubs McGee), who are very spoiled.

Most venues offer a quick look at an empty room. This event lets you see the lodge and event tent fully styled so you know exactly how the layout works for your wedding day. You chat with planners, meet vendors, and of course, grab a few tiny cookies!

The ultimate solution for having your cake and eating it too: three layers of cookie instead.
For Crystal & Kyle’s Disney-inspired wedding at @bellaseraeventcenter on Saturday, they fell in love with idea of the cookie trolley for their guests but still wanted a special cake-cutting moment to look back on.
So we prepared a Lemon Raspberry White Chocolate Cookie Cake with Lemon Buttercream to cut into and serve alongside tiny cookies for their guests.
It was an honor to be there with their family and friends and you could definitely, 🎶 “feel love tonight.”🎶

There’s a common wedding myth that you have to serve a traditional cake just to get that iconic cutting photo.
I’m here to tell you it’s simply not true.
If you don’t actually like cake, why would you pay for one and serve it on the most important day of your life? This right here is a three-layer Peanut Butter Cookies ‘n Cream cookie cake with Vanilla Buttercream. It’s substantial, delicious, and most importantly, something this couple actually enjoyed eating.
I love it when our couples realize they can ditch traditions that don’t serve them. You can still have that beautiful, photo op, but you get to do it with a dessert you love.
Plus, I might be biased, but having your cake-cutting moment at the trolley is just about the cutest thing I’ve ever seen.
