Here at The Mulwray, we have a soft spot for vermouth 🍸
This wonderfully complex fortified wine — infused with herbs, spices, fruits, and botanicals — deserves more than just a supporting role. When it takes centre stage, vermouth unlocks some truly extraordinary cocktail creations. From crisp and dry to rich and sweet, every style brings something unique to the glass.
From 21–31 March, we’re celebrating vermouth with a special menu of vermouth-based cocktails that showcase its versatility and the incredible UK makers redefining the category today.
The menu flows from light, aperitif-style serves to spirit-forward classics — plus a few non-alcoholic options for good measure. Highlights include:
Coast to Coast – Vault Vodka, Vault Meadow, Lemon, Dill
Spagliato – Rhubarb, Cardamom, Vault Meadow, Hundred Hills Rosé
White Sesame Manhattan – Sazerac Rye, Clarified Butter, Vault Meadow, Cardamom Clove
You can also enjoy these vermouths on their own — over ice with a twist of citrus, or topped with tonic for a refreshing aperitif. 🍋
Join us in raising a glass to vermouth. We can’t wait to welcome you!

We’re kicking off 2026 with a strong line-up of Burgundy arrivals, as we host @newcomer_wines at The Mulwray on Tuesday 13 January for a one-night-only celebration of wines from the region.
Join us from 5pm for a glass and chat with growers Catharina Sadde (Les Horées), Andrew and Emma Nielsen (Le Grappin), Raphaëlle Guyot, and Isabelle Vantey (Rouges Queues), and discover how they explore the more unusual and lesser-travelled corners of this iconic region.
Can’t decide on a glass or bottle? Enjoy a curated trio of Burgundy wines for £25.
Booking is recommended.
Les Horées — Catharina Sadde
It’s not a coincidence that Catharina’s first ever vineyard was ‘Les Prevolles’ - a beautiful parcel within the appellation of Beaune. Since she started her own domaine it’s been a mission for her to show the potential of the wines within Beaune, the lifeline of Burgundian wine culture.
With few incredible exceptions for many, Beaune has long lived in the shadow of its neighbours, often overlooked in favour of more glamorous villages and Crus. But that wasn’t always the case. Large houses like Bouchard, Drouhin, Jadot had long been focusing on larger cuvées combining fruit from many of their growers surrounding Beaune which meant that less attention was set on parcellaire specific wines.
In Catharina’s own words: ‘I’d like to buy more land in Beaune. Because people don’t have a fixed image of it, you can surprise them.
Despite having bought fruit from more famous villages in the past few years Catharina’s journey towards becoming a true advocate for Beaune is exciting. It shows the kind of attitude that is needed by a new generation of growers choosing their own identity often with vineyards that don’t carry a famed legacy of superstar winemakers but instead allow for reinterpretation and discovery.
To chat with Catharina and taste a glimpse into her next big projects RSVP via the link in our bio.
HNY everyone, see you all when we re-open on Wednesday evening!
