What a way to kick off The Synergy Series 2026! From sfincione to agnolotti dal plin, Chef Evan Funke’s menu was a tour through the flavors and techniques that have defined his career — joyful, precise, and deeply rooted in place.⁠ ⁠ From the intimacy of The Dialogue to the energy in the dining room both nights, this was a reminder of why we keep coming back to this series year after year.⁠ ⁠ Thank you, Evan, for your generosity and for sharing your craft so openly with us and our guests.⁠ ⁠ The Synergy Series is presented by Bell Bank, with support from @exploretock . Recently, our Beverage Director Jessi Pollak traveled with the Träkál team to Purranque, Chile, where the spirit is distilled from apples and pears and infused with botanicals foraged from the surrounding landscape. Along the way, she tasted and experienced those ingredients right at the source. ⁠ ⁠ Now, that same spirit finds its way into in our take on a French 75 with pisco, cucumber, mango, lemon, cava. Fresh and bright with a balance of vegetal and floral notes, it’s a cocktail that carries a real sense of place on our menu.⁠ ⁠ Stop by the bar for a glass, and maybe a story or two from Jessi herself!
