PRIDAY PICKLES!!! No ferments today sadly but a productive day for pickling! Today’s batches include Spiny Cucumber half-sour pickles; cardamom, ginger and turmeric picked cauliflower and a new batch of pumpkin achar as the last one went very quickly. I also made a soy / fish sauce dressing with rice vinegar to marinate the cauliflower stems in - will go perfectly with some rice and mushrooms as a comforting rice bowl.

Today’s FRIDAY! Which means……. (Drumroll) #FRIDAYFERMENTS Today I just about managed to squeeze in a few bits: - White kimchi with radishes - Lacto-Fermented red and green chillies for a tangy hot sauce - Salted aubergines to be made into a Sicilian style pickled aubergines tomorrow (Stories for the photos!) - Ginger and Turmeric Bug - amazing natural yeast source - Hearty Chicken Stock (neither pickled or fermented!) - Chicken Caesar mayo so the meat ain’t wasted! - Salt brined fries for the classic French fry experience Here are also a few book recommendations for those interested. @thomeagle once wrote a brilliant phrase about broths / stocks which was along the lines of: the best thing about them is that they teach you to skim the scum that rises to the top (I will allow him to correct this if he chooses!) @ducksoupsoho / @littleduckthepicklery have and will always have the best ethos when it comes to food - this book is a must have if you can find it. And @oliahercules in Mamushka gives some fantastic recipes for pickled and fermented amazements as well as incredible flavours throughout the book!

Today is the *FIRST EVER*… drumroll….. FRIDAY FERMENTS!!! Spent the last couple of hours making a selection of pickled and fermented goods, today’s batches: Lacto-Fermented cucumber halves with celery leaf and jalapeño chilli Antipasti / giardiniera style pickled courgettes and peppers Bread & Butter pickled cucumbers Pumpkin and Carrot Achar (South Asian chutney / pickle type affair) And one from the beginning of the week: Cabbage sauerkraut style Kimchi Keep you’re eyes peeled for more to come!

This is a short timeline of the woman I married, from the time we met to now. It’s impossible to capture every memory, every laugh, every meal, game, bottle of wine, and look of shock in one series of photos but this is the woman who I am incredibly incredibly lucky to be able to call my wife. @manoelachiabai I love you. I cannot wait to spend the rest of my life with you. I first proposed in Manhattan with an onion ring, sitting beside a priest we had no idea was there, and then again at our special place in London, The French House. Somewhere down the line we signed the papers and I learnt Portuguese. I never thought I’d find someone who shares the love of music, poetry, food, wine, chess, cards, weird occult shit and laughter with me. And never did I think I’d find someone who I could discover all of the things we have since being together, mainly our love for the Knicks! We’re family now. And nothing will untie that. The only thing that COULD is possibly that I didn’t run these photos by her for publication… 😬

From now on any poem I post is subject to removal. If it gets 2 likes yet I think it’s good it’ll remain. I don’t do this for clout, I just cba to commit to Substack or whatever although I probably will and realise that a few of you might be interested in what I’m up to. Most of my writing is terrible but I’m here in Brazil, trying to make a new life for myself and my fiancé. This ain’t it but it’s all I got right now. My guitars and keyboard are in England, a place slipping into authoritarian embarrassment. I have not run away. I will always support the things I believe in but the world is so big and we are all so young, always. I think Greg did the right thing by moving to Jordan. This is why I want to do this, this is what I have. Here’s a poem. It doesn’t need to be great. Good night x
