Big day.
Massive thanks to everyone who came out to @luxury.escapes Live today. Getting on stage, cohosting, trading stories with some of the best travel operators in the game, talking destinations that genuinely got me fired up.
Then getting my hands dirty and putting a dish together in front of you all. Thatās my happy place.
Loving this partnership with @luxury.escapes , Moving fast, having a laugh, and the response has been something else. Turkey sold out in record time. Morocco at the end of September going the same way.
And next year.
The big one. Iāve seen your guesses. Some of you are warm. Some of you are way off. Staying tight on it for now. But trust me, itās worth the wait.
Thanks for coming out. Means a lot.
Now come see us down at one of my @deliagroup venue soon! . š

Monday nightās Feast in Sydney raised more than $500,000 for the @buildcorpfoundation The biggest result yet. An extraordinary outcome for @lifelineaustralia a cause that matters deeply.
It is always incredibly humbling to cook alongside some of the countryās best chefs and have the opportunity to showcase what we do. But what stays with me most is the generosity in the room. The willingness of people to give, support and stand behind those battling mental health challenges, especially in industries like construction and hospitality where pressure can be relentless and too many people suffer silently in the dark.
Anything we can do to help people feel seen, supported and connected to hope, love and community is something I will always want to be part of.
I also want to thank everyone who came up to speak to me on the night. Hearing your stories about the food, the restaurants, the TV journeys and the memories weāve shared over the years genuinely means more than you know.
And the biggest thank you goes to Tony, Josephine and @jordan.sukkar . Without your vision, generosity and God given humility, evenings like this simply do not happen.
You should be incredibly proud of what you continue to build and the lives you are helping change. I felt very privileged to be a small part of it all.
The dishes I cooked where
Arak cured kingfish tart with vanilla, honey and fennel pollen.
Smoked hummus with chicken, pickled pine mushrooms, eggplant arwara, truffle vinaigrette.

One month since my good mate @jonathannonichef left Melbourne after helping us celebrate @melbfoodandwine , The maha kitchen is still buzzing.
This is the best part of our industry. Dishes created. Memories shared. Skills passed on, Stories told.
Miles, continents and seas can separate us, but real friendships built in the kitchen never fade.
Mutual respect for the craft. Bonds for life.
Canāt wait to get back to Valletta this year and see what Jonathan and the team at @nonivalletta have created. š²š¹ā¤ļøš¦šŗ
Today was something truly special. Huge congratulations to my great mate and fellow Maltese superstar Michael Grazia from @killercarsmelbourne
The passion, effort, time, love and determination that go into an event like this is remarkable. Days like this happen through sacrifice, commitment and the grace of God.
Today was never just about cars. It was about people. Families, friends, young and old coming together through a shared love of Aussie muscle, craftsmanship, mateship and community spirit. In a divided world, today felt united.
I was proud to be there amongst the crowd, having a few beers, talking to good people and admiring some incredible machines. It felt like reliving the great days of Australia, when there was a stronger sense of identity, pride and togetherness.
To have it on Anzac Day made it even more meaningful. We honour those who gave everything so future generations could live in freedom. May God bless their souls.
Australia is a blessed country. My prayer is that God guides us back toward unity, humility and pride in our nation.
No matter where you were born, if you choose to call Australia home, love it, protect it and honour it.
Thank you to everyone involved today, and may God continue to bless Australia. š¦šŗšš»

Easter has always meant something deeper to me.
Growing up in a Roman Catholic Maltese home, it was never just a date on the calendar. It was a feeling. A belief. A reminder that no matter how heavy life can feel, there is always the promise of new life.
It was about faith, family, and understanding that sacrifice and love sit at the centre of everything we are.
But this year feels different.
The world feels uncertain. Noisy. Divided. And in many ways, disconnected from what truly matters.
And maybe that is exactly why Easter matters more than ever.
As Iāve grown, and now as the head of my family and a father, I feel a deeper responsibility. I know Iām not perfect. I know Iām a sinner. But I also know I am called to lead.
To lead with strength. With forgiveness. With faith.
To show my family that we do not drift from our values when times get hard. We return to them.
I truly believe now is the time for us, as Catholics and Christians, to reconnect. To listen again to the Lordās voice. To stand firm in our faith and be proud of it.
Be loud. Be strong. Stand with conviction.
But always lead with humility, with love, with kindness, and with inclusion.
For too long, faith has been something people have felt the need to hide or water down. But the truth is, there is strength in belief. There is peace in surrender. There is freedom in knowing we are loved.
Easter is the ultimate reminder of that love. A sacrifice made for all of us so that we could live with purpose, with hope, and with grace.
So use today as a moment.
To reconnect with your faith.
To reconnect with what is right.
To reconnect with Godās love.
Because no matter how uncertain the world becomes, if we stay grounded in Him, we will always find our way.
Wishing you and your families a blessed Easter.
