for us love is… full symbiosis with beautiful damascena roses & lyophilized raspberries 🌹 SCOBY is an acronym for Symbiotic Culture Of Bacteria & Yeast. It is a living, jelly-like biofilm that helps us ferment sweet tea into kombucha complex, symbiotic community of mainly acetic acid bacteria (like Acetobacter) but in our case also lactic acid families too (like Lactobacillus bulgaricus & Streptococcus thermophilus) and various yeasts (like Saccharomyces) which live together & act as a protective, cellulose-based barrier how it happens? the yeast consumes the sugar to create co2 & ethanol, which the bacteria then convert into acetic & lactic acid (we will let you research their various health benefits on your own), creating your favorite tangy sparkling probiotic kombucha

when we first started making linden kombucha, we used to put a few fermented linden blossoms directly into each bottle. it was a tiny gesture but it made every bottle feel personal, almost like a message tucked inside. & honestly…the flavor was deeper, softer, more floral. we’re thinking about bringing this back. tell us - do you enjoy having blossoms in the bottle, or do you prefer your kombucha completely clear?

if you grew up around linden trees, you know this smell sweet, calming, impossibly light dried blossoms at peak bloom, we let them infuse slowly into the first fermentation linden is one of the most delicate ingredients we work with and one of the most rewarding 🫧
