I went foraging for stinging nettles and other local herbs with Chef Colton from @savourthewild . He served it two ways- as a fresh and bright gremolata and a creamy suprĆŖme sauce. One of the best meals of my life!

The collaboration highlights BC uni and geoduck, spotlighting the depth and potential of dive-harvested seafood through close work with the @diverscatchbc . Expect dishes like striploin with uni & scallop mousse and geoduck katsuobushi, prepared with intention, precision, and deep respect for the ingredients.ā
