We’ve been “quietly” working over the last year to find our voice in hopes of telling a story about what this island means to us through our events and dishes.
We found the voice, and our voice is finding its way to the small screen 📺
While we take a step back from events in preparation for what comes next, we’re going to start releasing a look back at our walks in the woods.

This is a mushroom bordelaise pâté en croute, featuring foraged and farmed mushrooms from @westcoast_mycology and a glaze that I could’ve never hoped to do justice while crouched over a fire without Chef Ross of @foxandmonocle.cafe having drilled it into me with such care and intention.

This year, Culinaire becomes a little wilder.
Chef @colton.aa and @samanrzpr of @savourthewild join forces with @finestatsea to create an immersive, multi-sensory experience that blurs the line between food, art, and environment. With two booths transformed into a living forest installation, guests are invited to step away from the crowd and gather around the fire. This is not a rushed taste, but a shared moment of connection.
The collaboration highlights BC uni and geoduck, spotlighting the depth and potential of dive-harvested seafood through close work with the @diverscatchbc . Expect dishes like striploin with uni & scallop mousse and geoduck katsuobushi, prepared with intention, precision, and deep respect for the ingredients.
This isn’t a grab-and-go bite. It’s an invitation to slow down, gather, and experience ingredients in an entirely new way.
We can’t wait to experience this one-of-a-kind collaboration at Culinaire. ✨
