Since there are some new people around here (hi, everyone 👋), I thought I might (re) introduce myself. I’m Rose Previte. Most probably know me as the owner of DC restaurants @maydandc , @compassrose_dc , @medinanightsdc , @kirbyclub , and @maydanmarket (opening in LA next year), author of the #maydandc cookbook , and co-founder of @gotherewines 🍷
But, at heart, I’m a Lebanese-Sicilian woman obsessed with food, hospitality, and travel. The restaurants, Go There, the cookbook, and pretty much everything I do tries to honor women- the ones I met traveling who welcomed me into their homes and the ones in my own family who taught me how to cook + instilled in me a deep love for feeding and gathering people 🧡
If you’re looking for me, you can usually find me in DC, LA, or somewhere in the air ✈️
A love letter to the women shaping West Jefferson Boulevard, building businesses, supporting one another, and creating a true sense of community along the way.

It’s a gift to be surrounded by so many talented women…each with their own story, all lifting each other up. This block is stronger because of them. 💛
What’s better than one Maydan? TWO Maydans!!! **the Tawle dinner menu is $95 not $75** @roseprevite did it again with Maydan Market in LA - offering a HUGEEEEE space with some more casual spots inside the market like their coffee shop and so much more. The Maydan dining experience here though completely blew me away. What I loved about this specific location was the fresh sourcing of amazing fish - both the tuna and branzino were incredible. Next time I’m back home in CA, you’ll find me here.

Writing the Maydan cookbook was a family affair.
These recipes and other beautiful creations from my family and my restaurants can all be found in the book and would make beautiful additions to your Mother’s Day table 🧡💐
We have sworn to avoid cheesy couple posts. We usually do, but I think some times call for an exception to be made to the rule. And in this world where we are constantly inundated with bad news, celebrating the good things is getting more and more important.
One of the good things in this world is @fearless_greene . He had a big birthday this month and we have CELEBRATED. Friends, if you care about loyalty, get yourself an Aries man. This guy loves hard and sticks with you through it all. Sports, never will he forsake Pittsburgh. When it comes to bars and restaurants (mine excluded), anyone who knows him for more than an hour knows exactly what he loves: old man bars with vinyl booths and red sauce or steak. Preferably 80’s music. We have had a fight for over a decade anytime I try to change which dry cleaners we go to because he’s created a deep bond with the staff and can’t bear to leave them-even after they lose our clothing. But that’s the thing, if you know him at all, you quickly know who and what he loves because he’s loud about it. Passionate about it. Screams it from the rooftops. I’ve always admired his clear ability to know himself and not be ashamed to show pure joy at what he considers good in this world. I’ve learned so much from David but this is one of my favorite things.
If we all could learn his unbridled practice of joy, appreciation, and positivity, the world would be a much better place.❤️ Happy birthday month, DG.
Today on Say Grace: Food for Thought in Hospitality with @stevepalmer12 —a conversation with @roseprevite on building something meaningful, and learning when to let go.
Chef and owner of Compass Rose and @maydandc , Rose has earned national recognition for her globally inspired, fire-driven cooking and deeply personal approach to hospitality. Maydan was named one of the “Best New Restaurants in America” by Bon Appétit, Eater, Food & Wine, and GQ, and became the first Middle Eastern restaurant in the U.S. to earn a Michelin Star in 2020. She’s also a James Beard Award nominee, author of Maydan: Recipes from Lebanon and Beyond, and was named “Restaurateur of the Year” by the Restaurant Association of Metropolitan Washington.
In this clip, Rose reflects on the moment she realized she couldn’t do it all alone—after years of pouring everything into her restaurants, even living above Compass Rose. The shift came when she learned to trust her team… even if that meant missing the night Michelle Obama walked through the door.
Because if you’re doing your job right, you’re teaching. And if you’re teaching, the restaurant doesn’t fall apart without you.

Tomorrow on Say Grace: Food for Thought in Hospitality—we sit down with Rose Previte, one of the most dynamic voices in hospitality today.
Chef, restaurateur, and author of Maydan: Recipes from Lebanon and Beyond, Rose is the force behind Maydan and Compass Rose—concepts that have earned national acclaim from Bon Appétit, Eater, FOOD & WINE, and GQ, along with multiple James Beard Foundation nominations and a Michelin Star—marking the first Middle Eastern restaurant in the U.S. to receive the honor. She’s been named “Restaurateur of the Year” by the Restaurant Association of Metropolitan Washington and recognized by the Washington Business Journal and Washingtonian as one of the most influential leaders shaping the industry today.
In this episode, Rose reflects on the journey behind that recognition—from an epiphany on a train through Siberia that changed the course of her life, to the whirlwind of opening Maydan, to the moment everything came to a halt in 2020.
“All the best new restaurant… Michelin… James Beard… it was overwhelming… and then it came to an abrupt halt.”
What followed wasn’t easy—but it was community that carried them through.
A conversation about resilience, growth, and learning when to let go—this one stays with you.
Episode drops tomorrow.
1,800 classes and he still says it’s just for the “community”... 😂 @fearless_greene commitment to SoulCycle is either legendary or a cry for help. 🚴♂️💨
From the music to the instructors, he’s hooked. But we all know the REAL reason he’s front row every morning! 🤫

I had 36 hours in Austin during @sxsw where @fearless_greene was screening his film, “Louder Than Guns.” Because it was a quick trip, we stayed in East Austin. I don’t usually spend much time there, but now it’s where I want to stay every time.
Austin, you were wonderfully weird and I’ll definitely be back to explore more. 🫶
Popcorn as a comfort food? @roseprevite is here for it. But only if it's the half-popped kernels from the bottom of the tray! 🍿✨
There's nothing like that "industrial size" popcorn fix. Do you have a weirdly specific comfort food craving? Let us know in the comments! 👇

Last week when we were cooking with grandmas 🧡
We absolutely loved having Mama Laudi and Chef Tarsa of @mehmooni.la take over Club 104 at @maydanmarket to share their Syrian and Iranian home cooking with us. You’re both welcome back anytime, because we could all use more of the love you—and all of the grandmas of the world—give us through your food right now. 🥰
