《 my Mamma's Cucina Siciliana 》
in honor of La Festa di San Giuseppe (aka Saint Joseph's Day), every March 19th
my mother made 'Pasta di San Giuseppe' (Palermitana style)... an authentic & traditional Sicilian-Italian dish!
cooked ingredients:
soffritto--tomato sauce (not much needed), onions (minced), basil (fresh), olive oil
sardines (fresh or frozen & thawed--cleaned) & anchovies (fillets canned in oil--drained) add to soffritto
fennel fronds-greens (cooked separately)
either spaghetti or bucatini (dry pasta is fine--cooked separately & al dente)
raisins (& you can also add pine nuts and/or saffron if you choose) add to soffritto
combine all ingredients in a deep baking pan
bake in the oven... note: cooking times for each vary, don't overcook!
top off with black pepper as desired, & if you choose--crushed red pepper flakes and/or toasted breadcrumbs too.

#tbt ...in honor of Sundance Film Festival '21 recently wrapping up, I thought about MONSTERS AND MEN!
I was fortunate enough to attend the film's world premiere at Sundance '18... & celebrate with the cast & crew famiglia!
but I was even more fortunate to have had an opportunity to play in the film! ...although my supporting work playing 'Officer Gambini' didn't make the final cut... I'm still so very proud & blessed to have been a small part of this tour-de-force film!

my tribute to THE SILENCE OF THE LAMBS film, which celebrates its 30th anniversary USA theatrical release (released nationwide on Thursday, February 14, 1991 by Orion Pictures).
I absolutely love this film, as it's one of my all-time favorites! Jodie Foster & Anthony Hopkins deliver masterful performances! & in my opinion, every element of this film is so freaking brilliant!
trivia: to date, only three films ever have won the so-called "Big Five" Academy Awards/Oscars... which are for Best Picture, Best Director, Best Actor, Best Actress, and Best Screenplay (either Original or Adapted)... the films are: It Happened One Night (1934), One Flew Over the Cuckoo's Nest (1975), and The Silence of the Lambs (1991).
personally: TSOTL was made way before my time in the biz, but during my earlier years of learning & working behind-the-scenes, I was fortunate to have worked on two other projects directed by Jonathan Demme (The Manchurian Candidate remake in which I was producer Scott Rudin's assistant, and A Gifted Man CBS tv pilot in which I was in the Locations Dept)... I didn't have much personal interaction with Demme, but I do vividly remember this about him... he made time daily to greet everyone in his path & on the crew, and also took time to say goodnight & thanks at the end of the long work days... & that gesture from the director to their cast & crew goes a long way!

sadly, maestro Jonathan Demme passed away in 2017 (aged 73). His other notable films that I admire are: Melvin and Howard, Something Wild, Married to the Mob, Philadelphia, The Manchurian Candidate, & Rachel Getting Married.

Rotunno was the cinematographer (director of photography) on many remarkable films, working alongside master directors including; Federico Fellini, Vittorio De Sica, Luchino Visconti, Dino Risi, Francesco Rosi, Mario Monicelli, Pier Paolo Pasolini, Stanley Kramer, Mike Nichols, John Huston, Robert Altman, Lina Wertmüller, & legendary producer Dino De Laurentiis.
in 1966, Rotunno became the first non-American member admitted to the American Society of Cinematographers.
He was born in Roma in 1923, and recently passed away short of his 98th birthday.

both are traditional, essential, & iconic foods in Palermo, & can also be found throughout Sicily.
~Arancini al ragù (aka Italian rice balls)~
cooked ingredients: white rice (medium-grain, boiled--my Ma adds pure saffron powder), ragu (ground beef meat with soffritto--tomato sauce, minced onions, green peas, basil, olive oil, & salt as needed)... let cooked rice cool until ready... then fill ball-shaped rice with prepared ragu and fresh mozzarella cheese... add fine breadcrumbs to coat the outer layer... deep fry in oil till a golden orange-ish color.
~Panelle di ceci (aka Sicilian chickpea fritters)~
cooked ingredients: chickpea flour (aka garbanzo bean), water, fresh parsley (chopped), & salt as needed... the mixture is constantly stirred until smooth & thick... spread mixture flat (half inch thick) & let cool until ready... then cut into square pieces... pan fry in oil until crisp & a golden yellow-ish color. season lightly with more salt, & black pepper if desired... & some people like to drizzle fresh lemon juice.
arancini translates to little oranges.
panelle can be eaten solo or with fresh bread, like a panino/sandwich (my personal preference). both are best served hot.
