Being coastal, we really wanted to pull from the East Sussex shoreline + countryside to create a drinks program that felt very location-based.
The identity is very contemporary + seasonal, with each drink’s story based on not just locality, but on the geography + narrative of the spirits, too.

TOMATILLO + BLACK MUSTARD LEAF MARGARITA ::
Tico Tequila / Tomatillo + Lime Cordial / Black Mustard Leaf Syrup / Cointreau / Salt
A margarita that sits between two landscapes :: Jalisco + East Sussex
Using @tico.tequila , the drink connects to the margarita’s Mexican origins with an English sensibility / Tomatillo, the tangy Mexican relative of the tomato, acts as the bridge between Mexico and the English garden / Black mustard leaf foraged locally in East Sussex gives it that herby English pepperiness

BURNT MANDARIN + LIMEQUAT HIGHBALL ::
O.P. Anderson Aquavit / Burnt Mandarin Cordial / Tavares Limequat Syrup / Soda / Candied Limequat Peel
The story for the highball is about layering citrus :: capturing and preserving it across the Summer season / The Aquavit amplifies the herbal profile, with the burnt mandarin (including lemon hybrids + Kinnow tangerines) + limequat adding both lightly bitter + caramelised citrus acids
