I love stout. In fact, the first beer I brewed as a homebrewer was a stout.
We started our beloved Church brewery 5 years ago and the first beer we brewed was a stout. Since then we have built out the church stout program, barrel by barrel. Carefully and obsessively honing our base recipes, hunting down barrels from our favorite spirit makers and developing our post barrel treatment under the working name, CAKEIFICATION. A couple of months ago we felt that we had reached full CAKEIFICATION in a trial and so the search for the perfect barrel was on.
That barrel turned out to be a big (duh) double mashed, long-boil imperial stout aged for a year in fresh Sazerac barrels and then transferred into dripping wet apple brandy barrels for another year. A symphony of expressive barrel, chocolate and caramelized Tarte Tatin.
Over the coming months this beer underwent a gentle, cold and slow CAKEIFICATION using a spectrum of coconut at different toasting levels, more vanilla than we’ve ever used (Indonesian Java and Madagascan bourbon) and heaps and heaps of toasted peanuts.
The result?
In short, CAKE® is the pinnacle of our stout program and we cannot wait to share it with you.

Our continual cosmic triple fruited imperial gose collab with @omnipollo returns, now with the Xtreme treatment pushed beyond our standard triple adjunct volumes. Clocking in at 10%, this drinks like a margarita and piña colada collided, loaded with tangerine and key lime purées, untoasted coconut flakes, coconut cream and emperor’s coconut. Our 10% uber luxurious imperial Berliner gose collab with @bjergsoe of @eviltwinbrewingnyc returns for our 10 year anniversary, absolutely packed with blackberry concentrate, yuzu purée, marshmallows, truffle salt, edible 24k gold and caviar. Dense berry character meets bright yuzu citrus, fluffy sticky marshmallow and a subtle refined musk from the truffle salt and yuzu. Over the top, super drinkable and incredibly luxurious.

Spent 2 magical days in Hopewell (NJ) last year hanging and brewing stout with the sweetest of friends, Alex and Sean @troonbrewing + and our BFF Matt Tarpey @theveilbrewing . Back at the church and ready to channel the energy that is TROON and The Veil we carefully layered our favorite caramel malts with our favorite chocolate malts, double mashed and boiled 12,5 hours. After long and cold conditioning we CAKEIFIED™️ this chocolate/caramel beast on a monstrous amount of hand toasted coconut, toasted and partially charred walnuts + heaps and heaps of vanilla beans + select brasilian coffee beans.
