We're away! Thank you to the collective of trades, planners, engineers and architects who have worked hard, flexibly and creatively to get us to the next phase — the restoration and construction of Saltash Farm, Carcoar.
We could not do this project without them, and the community's enthusiastic support. There was a period when people thought we'd hit a wall and quit. We won't stop. We'll push through, over, under, and around to get it done. Saltash Farm has become more than a project for our family — it's also for yours, and this extraordinary little village on the Belubula River.
Blayney Shire Council has also been barracking for us from the start while ensuring that the project follows the letter and spirit of the layers of rules and regulations that come with a Heritage project of this scale and complexity. Thank you, folks.
Anyone who reads my monthly newsletter from Galah will know that being away from my wife and young family has been tough. I think about it as a trade — spending less time with them now for more, higher-quality time in the future. I also know that many Australian families make this bargain daily and don't have a newsletter to help them process their feelings about it. Thank you for sharing your stories with me. There's great power and comfort in knowing that we are not alone.
Thank you to the kind souls who leave fresh-baked bread and eggs at my door, who stop me in the street to check in on me and who leave me to quietly work in the corner of the pub when I'm too cooked to cook. It can be a lonely walk. Thank you for walking with me.
The most enormous thank you is reserved for my wife, Edwina. She is more than the creative compass and planning engine of Saltash Farm. She manages this complex work amongst TV commitments, raising our kids, and looking after herself following her cancer diagnosis. Wild. Her strength and smarts inspire me daily.

We are looking for a cook to join our team at @thevillagegrocercarcoar and @saltash__farm .
Hours are Thursday to Sunday 7-3 plus extra when required/if desired.
Food handling and barista experience required and general good vibes.
We are also looking for a Hospitality Trainee who can start in the cafe and then progress to hotel operations at the beginning of next year.
