☕ May Microlot: Felipe Estela, Cajamarca, Peru.
There's a moment when a coffee farmer decides to stop chasing volume and start chasing quality. For Felipe Estela, that moment came when he joined the Finca El Morito network in Cajamarca.
He grew up in Querocotillo, producing Catuai and Catimor, the reliable, hardier varieties that make commercial sense at scale. But when he connected with the Flores family and their El Morito community, he made a shift. Caturra. Bourbon. Typica. Harder to grow, more temperamental, but in the right hands, extraordinary.
The Flores family have been in coffee since the 1970s. They founded El Morito in San Ignacio in 2009 and have since built a network of family farms across the region, with processing meticulous enough to earn them multiple awards in the Cup of Excellence auctions.
Felipe's contribution to this month's microlot reflects exactly that standard. Every cherry hand-picked at peak ripeness. Double fermented, first as whole cherries in sealed tanks for 48 hours, then for another 48 hours after pulping. Then a slow, 25-day shade dry.
What you end up with is soft peach sweetness, creamy milk chocolate, and a butterscotch finish that just lingers. Clean, refined, and genuinely worth slowing down for.
