Reviews - be it good or bad - is a way for us to improve our cocktail game. It's been all bright and sunny so far, but we hope to get more HONEST reviews. SIGNS OF LIFE: a Iloilo Heritage Month event organized by TRIP at the @celsoledesmahouse . It's no secret that we seldom get out of our cave. So when @mgxblas invited us to do a pop-up, we immediately said yes. But little did we know that saying yes would lead us up the stairs of a century old home, serving our concoctions to the more forward thinking individuals behind the Iloilo art scene. Even with the unbearable heat during that day, and almost a couple of hours looking for ice, we ended the night with pasted smiles on our faces. Serving event guests within the gates of an iconic home, surrounded by friends, artworks/installations/murals, and proper music is definitely something we will talk about for a very long time. With that said, we would like to convey our heartfelt appreciation to Margaux for the invite, @padraick and @jamors for being gracious hosts, the people behind @kikik.kollektive for the random conversations and banter, @mysticmountainmother for making us feel at home, and to @jobhablo @sound.spaaawn , @moneychiba and @nervegasm of @soundadvice.wav for providing audio candy to make the heat more bearable, and to people we met during said gathering. As you can tell from our blabbering, we truly are grateful to be part of said event. Hospitality can be a very demanding and exhausting mistress. Much more if you're a cocktail bar with a shoestring budget, serving concoctions to a non-cocktail drinking city. Profits are small, and work hours are long. But then you encounter guests that understand why one does the things he/she do, and it makes everything all worthwhile. It keeps you going. And for that, we thank you. With that said, we're currently working on a new menu. An expression of more than three years of discovery, frustration and interesting evenings interacting with all of you. So long as we have a space, we will continue to do what we do. Wednesdays at NCTR are for R&D. So what happens when you put mechanical, computer and civil engineers, a boulanger, and a reputation management specialist all in one place to try and help a digital nomad make his first signature cocktail? As if it weren't already obvious, we don't take pictures during shifts. And yes, we rely completely on guests/friends for our IG content. And because of that, we sometimes get this. Yes, it's far from the usual marketing/branding content. But as we always say, it's the people that make a place interesting. Timmy and Carlos dropped by on their last night in Iloilo. When we asked how they knew of our space, they said they saw it through an IG story of someone they follow. So yeah. If they didn't enjoy their experience, it's your fault @icoylaa . 🀣 But then again, maybe they did - based on Carlos' smile.
