The closure of @quayrestaurant has me thinking back to that time @nik_to and I travelled to South Korea with @chefpetergilmore for an odyssey through the country’s most precious ingredients, handpicked by @table181 . We ate poached cow’s udder, we walked through fields of heirloom grain, we cooked with monks and masters of Korean technique. We sang karaoke in the tour van, we grilled chicken over coals, we pillaged the supermarkets, we bought facemasks infused with placenta, we did it all in the name of provenance and “research”.
