When we brought the @chaosdinnerpdx to life, there were a lot of moving parts—timing, pacing, people, plates, and that constant behind-the-scenes pressure to make everything feel effortless for guests. It truly wouldn’t have been possible without the team at @floor19venue . From the moment we loaded in, they were locked in with us—calm, capable, and ready for whatever the night needed.
Morchella works with venues all over Oregon and Washington, but this one stands out in a big way. Sitting on the 19th floor across from the Arlene Schnitzer Concert Hall, Floor 19 has floor-to-ceiling windows with views over South Portland that make the whole room feel elevated before the first course even hits the table.
And for chefs, the kitchen is a dream—two of everything, commercial refrigeration, and a layout that makes it possible to plate 1,750 portions in just a few hours without the chaos behind the scenes.

Meet Cameron Dunlap—the visionary and instigator of Chaos Dinner!
A brilliant chef and master of multitasking, Cameron was inspired to bring Chaos Dinner to life after a trip to Alaska—where, while riding in the back of a jeep, chef @flourgirlandflame told him about her and her friends executing their own version of a chaos dinner.
He came home fired up and got to work right away.
After nearly 10 years running fine dining kitchens—including his own—Cameron shifted into the world of events and catering, building it under Morchella Events.
Cameron couldn’t be more excited to see this vision come to life, and can’t wait to welcome you all tomorrow!
