This vegetarian dish is an artful exploration of the fresh, bright flavors of spring. Misozuke grilled local morel, zucchini, fresh bamboo, dandelion, and pickled radish with sauce soubise.

Each Oregon uni from @oonee_searanch is carefully shucked, cleaned of kelp, and gently removed from its shell to preserve the quality and integrity of each lobe.
Aaron and his team at OoNee Sea Urchin Ranch are not only farming uni for our tables, but are also working to sustain the uni population in Oregon!
