being a pastry enthusiast is wild because I took a look at my day and said “yea I want to spend three hours making two soufflés” 😀 I had a craving for carrot cake but wanted something light so I made a carrot soufflé with masala chai spices and a salted caramel base, with a side of greek yogurt for tang - soufflés combine many things I love about baking: they’re specific, watching them rise is beautiful, you have to eat it within 5 minutes of coming out of the oven and it’s gone within 10 🥕
