PAPI x Chater’s @papi.restaurant One night. No safety net. Mathew and Charlie of PAPI bring a preview of The Golden Tooth to Chater’s. Their new East London pub opening later this month, and this is the first taste of what’s coming. Mathew takes the stove. Charlie takes the room, the music, and the wine list. It’s their menu, cooked in our kitchen. Loud, loose, and exactly as it should be. A full set menu served all evening, with an optional wine pairing if you want to go all in. Before a new menu, we sit down. We taste the food, drink the wine, and talk through how service should feel. This happens behind the door, when you’re not here. That’s where it all starts. It’s not complicated, but it takes time. Standards come from care, repetition, and paying attention. This is the work before service. Proud of the team. New dishes launching next week.

Free Pasta! January can be a bit dull. Cold evenings, long weeks, not much to look forward to once Christmas has packed up and gone home. So on Thursdays throughout January, if you book a table in the evening with us, pasta is on us. No catches. No small print. Just a bowl of pasta as a thank you for coming out. Come hungry, share a few small plates, open a bottle, maybe stay for pudding. Bring friends, make a night of it, linger a little longer than planned. January doesn’t need to be blue. We’ll do the pasta. You do the rest. Book as usual. Thursdays only. January. Who's coming?

NEW YEAR’S EVE AT CHATER’S! Swipe for menu. >>> Book now. A celebration, a treat and the perfect way to begin your evening. Our New Year’s Eve set menu is priced at seventy pounds per person and includes a welcome sparkling wine cocktail. Expect a feast created for elegance and joy. Focaccia with cacio e pepe butter, mortadella gilda, devilled caviar egg, tuna crudo, truffle fettuccine, Iberico pork with cotechino and lentils, Meyer lemon sorbet with Saffron Grange sparkling wine and a chocolate mousse torta to finish. We close the restaurant before midnight. It is a deliberate choice because we believe the bells are best brought in at a house party or the pub or indeed dancing in the Market Square with champagne in hand. You will step out into the heart of Saffron Walden just in time for fireworks and the countdown. We may even join you. Reservations bookings essential. We can't wait to see you!

Words in Walden @wordsinwalden A literature festival rooted in Saffron Walden since 2006, returning this year with an inspiring roster of events and talks. We’re joining in on 8th October 6.30pm with a talk and demonstration from @maxchater . Expect two pasta shapes made before your eyes, stories about the history of Chater’s and @vaultaperitivo , and the chance to get hands-on. Everyone will leave with a little goodie bag to take home.
