Meet the final three chefs joining us for Sup-sup sui 濕濕碎: Mister Jiu’s 10 years in Chinatown, Presented by @Resy ! @Lucas.sin is the chef and co-founder of @eatniceday and @junzikitchen . He opened his first restaurant when he was 16 in an abandoned newspaper factory in his hometown of Hong Kong. He’s been named a Star Chef Rising Star, an Eater Young Gun, Forbes 30 under 30, and a Food and Wine Best New Chef. Lucas is the host of Bon Appétit’s James Beard Award-winning digital series Street Eats, Food52’s digital series Why It Works, and a host of NatGeo’s premiere YouTube original series Best of the World. With Eric Sze, chef of Taiwanese restaurant 886, Lucas co-founded @shyboyzclub , an introverted Asian pop-up collective. He joins @brandoj , @meilin21 , and @archanchef in the kitchen on Saturday, May 9th. THE (SHY) BOY(Z) ARE BACK (IN TAIPEI) First, beef noodle soup at Taiwan Beef Noodles · Chicken Soup 牛肉麵*雞湯. In your bowl is a trio of beef cheek, short rib, and shank, braised in a broth built off of scallions, tomatoes, and ginger, fortified by a threesome of Sichuan fava bean paste, Taiwanese spicy fermented soy bean paste, and sweet rice fermented tofu, served over a choice of thick or thin noodles. This spicy, sweaty fervor is the cumulative effect of chef’s relentless attention to detail. IF YOU WET BRINED, IT’S NOT TOO LATE FOR CRISPY SKIN. Pat the skin dry, and let it air out (in the fridge) overnight with a bit of baking powder + spices. I know because I usually steam/braise my turkey first so it’s delicious but soggy and still want to achieve crispy skin. Swipe ➡️ for the steps. This year, I’m short on time so instead of an extended air dry post-braise, I’ll treat the skin with a roast duck lacquer of baking powder, maltose, red vinegar, and baijiu, before it gets deep-fried. Let you know how that goes.
