Itās funny how life creates happenstance.
Back in the day, I would have never imagined my path would land me where it has. But these days, when I find time to sit and reflect, I can pinpoint small, seemingly obscure and meaningless moments along the way, that I recognize now as gentle nudges towards the career Iāve chosen.
Case and point, an old Shun knife my family has had for as long as I can remember. I could have never guessed back then that an old random (or so I assumed) knife from my familyās drawer would carry as much meaning as it does now. But, fast-forward to the present, and here I am being given the opportunity to share a bit of my culinary journey by way of partnering with Shun Knives.
Like I said, life is funny.
Thank you to Shun for the chance to share a bit of my story, and for the new set of knives. I like to imagine that many years from now, theyāll have created a new story to tell.

Last Sundays dinner collab with @bradyishiwatawilliams and @keiji_kuma_tsukasaki was big izakaya vibes. It was a beautiful reminder of how much joy there is to be had from cooking with friends.
A big thank you to the @tomo.seattle team for doing the heavy lifting and organizing the whole thing. It was a pleasure to come out, kick it, and cook a fun dinner for folks. Looking forward to running it back before too long.

Seattle Rising >> On Sunday, March 22, weāre hosting a special BUDS dinner built around hometown heroes. Keiji Tsukasaki of LTD Edition Sushi joins Victor Steinbrueck of Local Tide and the Tomo team for a multi-course, izakaya-inspired meal of seafood-forward dishes and drinking food. The menu will include geoduck a la tako wasabi, scallop toast, creamy mochi soup, Dungeness crab and bamboo shoots, handrolls with negi-toro and ankimo, black truffle stuffed chicken wings, and salted yuzu and sansho peppercorn kakigori. A selection of specialty highballs, Japanese wines, and Champagne will be available for purchase.
This is a special menu and we are not able to accommodate allergies or dietary restrictions. The menu is not vegetarian.

Wing of the Week: The Nuoc Cham Wing!
Weāre starting off the New Year with a fun lil collab with our friends over at @vindicktive_wings .
This wing features a Nuoc Cham glaze, Maggiās Mayo Drizzle, topped with a garnish of Dill, Mint, and Cilantro. For those who know, you might recognize these flavors from our Rockfish Banh Mi or Rockfish Bowl. Think that, but on some of Vindicktiveās notorious chicken wings.
We had a great time putting these together with Chef @jennifer_fiddlesticks , and getting to kick it with the Vindicktive crew (no shortage of fun being had over there).
Stop by Vindicktive this week to order up a few dozen and soak in the immaculate vibes ;)
Pro tip: You can enjoy this sauce on their tendies and chicken sandwich too. Itāll taste even better upstairs, at @thelevelupatvindicktive , washed down with a Boilermaker (a Miller High Life and a shot of Fernet Branca).

Dim sum nostalgia meets Pacific Northwest seafood in Rising Star Game Changer (presented by @sanpellegrino_us ) Chef Victor Steinbrueckās (@victorsteinbrueck ) shrimp toast at Local Tide (@localtide ). ā

He mixes chunky shrimp with pork fat, white pepper, garlic powder, and MSG, spreads it on white bread with sesame seeds, and fries it until the edges are crisp but not greasy. A Thai chile crisp made with garlic, fish sauce, sugar, and a side of sweet mayonnaise keeps heat and richness in balance.ā
