✨WE’RE WRITING A COOKBOOK!!!✨
It feels surreal to even write that, because Amma and I have dreamt about this time and time again over the past eight years. Since day one, so many of you have asked for Amma’s recipes, have (rightfully) called me out for not better documenting her culinary gifts, and most importantly, commiserated with me about the overwhelming lack of Bangladeshi representation in the cookbook space.
And now I can finally respond with something real, something I hope will honor my family's traditions, reflect our community's values, and bring joy to the many people who love eating, making, and sharing Bangladeshi food.
Thank you to the incredible @sanajaverikadri@micheledeis@ljdozier and @abramsbooks for seeing us, believing in us, and making this happen. Thank you to my siblings for the never-ending encouragement. And thank you—our Korai family—without whom this opportunity would never have existed.

Thank you to the incomparable @ligayamishan and to our Korai family who have carried us to this incredible moment.
The New York Times rarely awards three stars, and to see a Bangladeshi restaurant among that small circle feels deeply personal, for our culture and our community.
For a small Bangladeshi restaurant like ours to receive such an honor is a dream far beyond anything Amma and I could ever have imagined. Korai Kitchen started out as a small catering business working out of an even smaller commercial kitchen in Englewood, NJ. The Korai Kitchen we know today only exists because my mother decided to take a chance and bet on herself, and that bet was not an easy one to make. These past seven and a half years have tested us in ways we never could have fathomed, nearly breaking us several times over. But through it all, my mom showed up with faith and grit, determined to see her vision through, despite the obstacles and despite the odds.
I’m so proud of Amma for never giving up on her dream. I’m endlessly proud of our entire Korai team for showing up and doing the hard, unglamorous work day in and day out. This industry demands everything of you. As challenging as that is, what I’ve learned is that if you persevere with love and conviction, under unbelievable pressure, you don’t just make diamonds — sometimes, you get stars. ✨
