The Rise of Indian Food: Recipes Reimagined by Trésind Studio by Chef Himanshu Saini is now available for pre-order with @phaidonpress ahead of its global release in May 2026. From Chef, “Indian food is in the midst of a global renaissance. This book is our contribution to that movement—honoring the soul of Indian cooking while fearlessly pushing its boundaries and the evolution of ingredients and recipes.” With deep gratitude, this book is a shared journey, and we want to extend a special thank you to @bhupendernath for his ongoing support and counsel. Our sincere appreciation also extends to @chefmanishmehrotra and @massimobottura for their generous contributions and forewords. Finally, this project would not have been possible without the unwavering commitment of the Trésind Studio team, working tirelessly behind the scenes every day. The cookbook features the talented work of co-writer @itsliamcollens and is richly photographed by long-time collaborator @shresth_maloo Link to pre-order in the comments. Signed copies available while they last. #TheRiseofIndianFood 🇮🇳

This was not my first meal @ristorantelido84 . Last year at Lido 84, Mrs EatGoSee and I enjoyed one of the best lunches we had last year - and one of the best lunches we’ve ever had point blank. Fast forward to a dinner a month ago which was nothing but exceptional. A fabulous menu of dishes from veal sweetbreads to two superb pasta courses including my favourite - their Fusilloni in pistachio and marinda tomatoes. The oxtail agnolotti is thin, meaty and yet light. A deft hand wielded by chef Riccardo and his team. His brother Giancarlo and the team epitomise generosity and hospitality, with some of the best restaurant service anywhere in the world. I left worried and wondering when I may return again. Just like last time. Absurdly Lido 84 has only one Michelin Star, what’s up with that @michelinguide ?! 🤔 You can check out a review about Lido 84 through the link in my profile but like I said - run, don’t walk. #invited #lido84restaurant #lido84 #worldsbestrestaurants #guiamichelin #finedining #sweetbreads #lakegarda #itsliamcollens #eatgosee #fusilloni @theworlds50best @manuelamariafix @thomas.barker @worldofmouthapp @foodwritersinthewild #finedininglovers #onemichelinstar #musteatrestaurants #cbitribe #wheretoeatitaly #lpfood #foodandtravelblog #foodandtravelblogger #worlds50bestrestaurants #worldofmouthapp #restaurantreel #tastingmenu #restaurantreview

On this #shortcuts, @tresindstudio was bound to feature with their ever-changing PANI PURI. A course many familiar with the restaurant will know very well. A boujis pimped up homage to the popular Indian street food that changes with every menu. I always look forward to each season’s iteration of pani puri. You can’t buy this course individually, but it’s always my favourite start to their tasting menu. #eatgosee #shortcuts #dubaieats #dubaifood #foodfinds #panipuri #panipurilovers #panipurilover #finedining #finedininglovers #finediningram #finediningfood #finediningrestaurant #michelinguide #michelinstar #michelinstar22 #michelinguidefood #michelinguidedxb #indianfinedining #tresindstudio #dubairestaurants @vip_inpanwar @chefhimanshusaini

The final book looks polished. The making of it was service hours, edits, recipes, photography notes, deadlines, and a restaurant that never stopped evolving. This episode opens up what it took to write The Rise of Indian Food properly. Full episode out now. Link in bio. #chefjkp #himanshusaini #liamcollens #theriseofindianfood #dubaifood

Some stories only feel strange because they were years in the making. For Himanshu Saini, Michelin was never just an award moment. It was part of a much longer belief that Dubai, and Indian food from Dubai, belonged in that conversation. Full episode out now. A three Michelin star book sounds glamorous from the outside. But when Liam Collens was asked to co-author The Rise of Indian Food, real life was still happening. Full-time job. A baby on the way. And somehow, selling a car on Dubizzle in the middle of it all. That is the part people do not always see behind a finished book. Full episode out now. A finished book looks clean. The making of it rarely is. The Rise of Indian Food came together through service, edits, recipes, photography, deadlines, and real life happening in the background. This episode goes into what it took for Himanshu Saini and Liam Collens to turn Trèsind Studio into a book. Full episode out now. THE RISE OF INDIAN FOOD is finally out after 2.5 years of writing, editing and agonising! It has been nothing short of a labour of love for many of us involved. Just like Trèsind Studio, The Rise of Indian Food pulls back the curtain on Trésind Studio and unpacks Chef Himanshu’s philosophy—his curiosity, drive, and restless pursuit of a future for Indian cuisine. It’s a dialogue between place and plate, memory and modernity, discipline and imagination, refusing to tether Indian cuisine to a single definition. Like the restaurant, it holds a question up to the light before moving on. We will do our best to get information out to, but importantly, a massive thank you to @jamesknightpaccheco of the @chefjkppodcast for his support by squeezing us into this season to talk about this magnificent project. As usual, @_courtneybrandt_ is the glue that binds us! Have you bought your copy? #theriseofindianfood #foodwriter #itsliamcollens #cookbook #authorsoninstagram

We are proud to announce the official publication of The Rise of Indian Food: Recipes Reimagined by Trèsind Studio, marking a moment that feels bigger than a book. It’s a snapshot of a cuisine in motion, shaped by memory, technique, and a willingness to challenge its own boundaries. Led by @chefhimanshusaini and co-written by @itsliamcollens this is the language of Trèsind Studio on the page: precise, thoughtful, and quietly evolutionary. Dishes that don’t just reinterpret tradition, but expand: layer by layer, idea by idea. This is Indian cuisine as it is now and where it is going next. A very special thank you and recognition to our many partners at @phaidonpress , as well as the thoughtful forewords by Chef Massimo Bottura and Chef Manish Mehrotra. We will forever appreciate the ongoing support and leadership from @bhupendernath . The cookbook is richly photographed by our long-term collaborator, @shresth_maloo . Available via Phaidon, Amazon, and other discerning outlets. Links to purchase can be found in our bio, or in the comments.

The moment Michelin walked in, everything changed. For Himanshu Saini, it was not a dramatic reaction at first. It was silence. Shock. No expression. Years of work landed in one sentence: Congratulations. From that moment to three Michelin stars, and now to the launch of The Rise of Indian Food, this episode goes into what it takes to build something, document it, and carry the weight of it properly. Full episode is live now. #chefjkp #himanshusaini #tresindstudio #michelinstar #theriseofindianfood
