Fine dining is at a crucial tipping point and it's future is very uncertain. The dominoes are already falling with Maneesa and Noma. Every Chef knows that things are changing rapidly, everything is simply harder since the pandemic. The flaws of the current F&B business model have been exposed and people have changed.
This type of cuisine requires religious devotion and sacrifice that fewer are willing to give. Long hours, backbreaking menial work, and toxic work environments. Exorbitant prices that reek of elitism and a culture of exclusion.
But they say pressure makes diamonds...
Beautiful diamonds of edible art, that nourish the body and stir the soul. A fleeting, ethereal moment in time that cannot be captured with current technology. You can take a picture but can't taste it.
It feels like the last dodo bird trying to find its mate...
We both had to sacrifice and hustle to get behind the pearly gates and don't regret it for a second. It's what we love. It motivates and inspires us to be the best for our guests. I sincerely hope things get better, but don't want to clutch the pearls too tight. Get it while you can kids, we are both blessed beyond measure to get ours.

I first fell in love with tacos when I was going to school in Los Angeles.
Leo's taco truck was our spot and the food was transformative.
Because of Leo's popularity there was always a line. A random collection of loyal patrons would patiently wait on a sidewalk on Highland Ave. College students, drunks, locals, would all gather for Leo's tacos. The common denominator.
So here we are @tacoclubhawaii ! It's about family, friends, and having fun cooking for our community.
