🍕 It’s hard to explain nostalgia…sometimes the catalyst is a smell, other times it can be a sight, perhaps some ingredient that brings a distant memory rushing to the front of your conscious mind…
@novel.pizza evokes a feeling…hard to explain or pinpoint exactly what or where it begins, but I think even just as I was approaching, I was overwhelmed with a sense of past, youth, a refreshing naivety, the kind that feeds an imagination with endless possibility…perhaps it’s the decor that brings me to the 90’s, or the tasteful volume of carefully curated music…maybe it’s the smells of ‘za being made to order through the framed passageway into the kitchen. Nevertheless, I don’t really care to know why. I just crave more of it, now more than ever.

Today kicks off the historic 20th stop on my Tripping Billy Chicago tour but this one is extra special.
@rythatguy_@gremski and myself are Chicago pizza underdogs that met 3.5 years ago at a pizza event at @pauliegeeslogansquare celebrating the best home pizza makers. We maintained our friendships and have both made our marks on the Chicago Pizza scene as @novel.pizza has become one of the best and hottest pizzerias in town and I've continued use pizza and my cooking as a way to share my story of reinvention after my life changing Muscular Dystrophy diagnosis four years ago.
Our stories come full circle this week as we present to you, The Tripping Billy at @novel.pizza .
My namesake pizza with it's signature shishito pepper cream sauce, corn, pickled jalapeños, mozzarella, cheddar, and scallions will be available today through Saturday.
More importantly, a portion of the sales of each TB sold will be donated to my @mdaorg fundraiser.

We're head to Pilsen for a full circle collaboration with my boys @rythatguy_ and @gremski from Novel Pizza. Back in 2021, we all took part of the "Slice of Summer" event at @pauliegeeslogansquare celebrating Chicago's best home pizza makers and flash forward four years and we're both making our mark on the Chicago Pizza scene. Now we are linking up to bring you my namesake pizza on Gremski's elite thin and crisp tavern style crust.
If you're new to the TB, it starts with me signature shishito pepper cream sauce and is topped with corn, pickled jalapenos, mozzarella, cheddar, and scallions. More importantly, a portion of the sales will go to @mdaorg fundraiser, which helps children and adults like myself living with Muscular Dystrophy, ALS, and other neuromuscular diseases.
