Our second full fresh hop beer of the 25 season is here!!! Damp 25.02 was brewed in collaboration with our buddy Sean from
@omegayeast . We used Omega’s Point Loma+ for this beer. This is a new to us yeast that Sean recommended we try. For you nerds out there it’s a version of what would be called San Diego Super yeast. The cool thing is the yeast is edited to not produce diacetyl and not form a haze when dry hopping. As you all know we tend to struggle making clear highly hopped beer with our house ale yeast so this sounded perfect for a clean, crisp, clear WC IPA.
This beer features over 200lb of shredded, fresh, wet Simcoe, Citra, and Pink in the mash tun after the boil. We then added over a 1lb/bbl of freshly kilned Citra, Pink, and Dolcita (formerly HBC1019) in our pressurized hop back on the way to the fermenter. After fermentation we dry hopped with a brand new product from
@yakimachief called Cryo Fresh Simcoe and then added another dry hop of some bangin Simcoe T90.
That’s a whole lot of mumbo jumbo, I know. All you need to know is the beer is awesome. The yeast did exactly what it supposed to do and produced a clean, clear, dry West Coast IPA with incredibly saturated hop flavor and some ripping aromatics. Notes of Orange Mamba chews, mango starburst, fuzzy peach skins, and that distinct raw fresh hop character. This is a Simcoe bomb. If you were a fan of Life Before Insanity you’re sure to love this.
