Every culture has a hot sauce, or a few. @flavourfull.ca , we stock a wide range. The peperoncini we reach for on takeout pizza, the harissa we use to jazz up a stew, the chili crisp we drizzle over a fried egg. None of these are about heat. They’re all about flavour, and knowing when to use it. That’s what I look for when I’m buying for the shop and stocking my own kitchen. If you’re thinking about what to cook this weekend, this is a recipe worth knowing about. Smoky, garlicky shrimp with sherry vinegar, ready in 20 minutes and the star of your tapas table. We’ve been leaning into the Spanish pantry lately. La Chinata smoked paprika and Belazu sherry vinegar are the heroes here, but also, the fresh harvest of Deortegas organic olive oil is new in the shop, and we’ve added two ingredients we’ve loved for a long time: Bomba rice and Marcona almonds. Local asparagus should be in stores next week (we’ve got the intel from @welshbrosfarms ) and I’m already thinking about all the ways I want to eat it. This recipe’s a good place to start: @seedandmill tahini whipped with white miso and a swirl of @holyduckchili oil. Crisp edges, chewy centres. Meringues, but better. We’ve got a few tricks to make them anything but ordinary. Inspired by Ottolenghi’s giant raspberry meringues, we use intensely flavoured New Zealand freeze-dried fruit powders for a sharp, fruity hit and bright colour. Eat them as is, or turn them into mini pavlovas with a little curd, cream and fruit.
