Another successful Fresh Olive apprentice training day, led by our Culinary and Experience Lead, Andrew Clark.
This time, the apprentices prepared lemon sole stuffed with a scallop mousse, served with warm tartare sauce, BBQ asparagus, and locally foraged wild garlic. The dish draws inspiration from Chef Nathan Outlaw and his approach to seafood, including his take on tartare sauce.
It’s fantastic for our apprentices to work with such incredible, fresh, and locally sourced ingredients.
We’d also like to take this moment to welcome our newest apprentice chef, Kai Bartlet, to Entier!

Behind the scenes before the doors open at the Seafood Expo Global 2026 - setup underway, produce sourced, food prep in full swing, and the team working hard to bring every detail together. The day was all about preparation, collaboration and putting the finishing touches on the seafood bar and menu ahead of an exciting few days at the expo showcasing Scottish produce! 🏴
𝗘𝗮𝘀𝘁 𝘁𝗼 𝗪𝗲𝘀𝘁 𝗳𝗼𝗿 𝗙𝗿𝗶𝗲𝗻𝗱𝘀 𝗼𝗳 𝗔𝗡𝗖𝗛𝗢𝗥
After the challenge of completing all 4 Kiltwalks last year, Mark Bannerman and Scott Jackson have decided to do something different this year in support of Friends of Anchor.
Starting on the 17th of July 2026, they have decided to walk 35 miles over 2 days on a coast-to-coast walk from Bo’ness to Clydebank, travelling east to west along the Union Canal before joining the Forth & Clyde Canal, passing the iconic Falkirk Wheel along the way.
They would love for anyone who can to join them, so get in touch if you're free! A few of the Entier Family have already committed to joining them, including Entier Team Leader Peter Bruce, and Operations Team Leader Brian Knight.
They smashed their target last year and would love nothing more than to do the same again this year, after all, it is for such an amazing cause. Every donation, no matter the size, will make a real difference in supporting those affected by cancer and the vital work carried out by Friends of Anchor.

We are absolutely delighted to be able to share the video from this years Shine Awards!
What night it was, and this video perfectly captures it! A massive thank you to everyone who made the night such a success. Our host for the night, Alex Fleming, for taking us through the awards and keeping us thoroughly entertained, the prestigious Gleneagles Hotel for the delicious food and fantastic hospitality, and some exceptional performances from the Singing Waiters by SOS who surprised and blew the guests away with some incredible opera singing, and to the amazing Waterfront Band for getting everyone up on their feet and dancing the night away.
A special thank you also has to go to some of our suppliers, Gaudio Awards, 360 Photobooth Aberdeen and Andrew Dunn of AWD, for their contributions to making the event so memorable.

Iona joined us in 2017 as a Payroll Apprentice through our Fresh Olive Apprenticeship programme. An apprenticeship offered the perfect balance, giving her the opportunity to learn while gaining valuable hands-on experience in a professional environment.
Since then, Iona has progressed into her current role as Payroll Team Leader. She now oversees payroll processes, ensures accuracy and compliance, and supports the wider team. She is also helping develop a colleague progressing through a similar role to where she once started.
Iona’s journey shows just how powerful apprenticeships can be when talent is supported, developed, and given the space to grow.
