homemade COOKIE CRISP CEREAL 🥣🍪
essentially mini cookies but made with wholesome ingredients!
It’s a labour of love to cut each cookie by hand but quite satisfying and the result is well worth it
makes 2 trays~
*100g oat flour (blended oats)

*50g wholemeal flour (or plain/other)

*50g ground almonds

*1tbsp agave/maple to taste

*1/2 tsp salt
*35g melted coconut oil

*50g runny nut/seed butter (i used

*110-125ml ish plant milk i used
@plenishdrinks soya
*handful of mini dark choc chips
@vilgain
+handful dark chocolate flakes (or finely chopped chocolate bar)

method:
🥣 combine all ingredients apart from the chocolate in a food processor or blender (i used my
@haieruk - it’s so good)
🥣 the dough should come together but not be sticky, if it seems too dry add a splash more milk
🥣 then fold in the chocolate (or pulse for a few seconds with the blender to incorporate)
🥣roll out between baking paper until it’s around 3-4mm thick - the thinner the crispier they’ll be once baked
🥣use a bottle cap lid, or anything small and circular to stamp out the cookies, this part take a bit of patience, repeating until no cookie dough is left
🥣 place into like baking trays (i made about 2 trays)
🥣 bake at 175c for 13-15minutes until golden
then let cool
🥣serve with milk of choice and store in an airtight
