EARL GREY BANANA BREAD 🍌 with matcha butter | vegan | easy | one of my favourite flavours to jazz up the classic banana bread: p.s it tastes even better the next day :) serves 8-9~ 240g ripe banana 90g coconut sugar (can sub for light brown) 50g cane sugar (can sub for any white sugar or more coconut) 80g neutral oil 70g coconut/dairy free yoghurt 3 tbsp earl grey (from 3 teabags) + 3 tbsp hot water 1 tsp vanilla extract 185g plain flour (i used 120g plain, 65g spelt) 3/4 tsp baking soda 1/2 tsp baking powder pinch of salt earl grey glaze: icing sugar earl grey-infused milk matcha butter: 3 tbsp vegan butter 1.5 tsp matcha powder 🍌 preheat oven to 160c fan and line a loaf tin 🍌add the hot water to the earl grey, set aside 🍌 whisk the mashed banana, oil, yoghurt and sugars, vanilla 🍌 then whisk in the earl grey mixture 🍌now sieve in the dry (flour, baking powder, baking soda) and fold with spatula until just combined, careful not to overmix 🍌 transfer to the tin and bake 55-57mins until toothpick inserted comes out clean 🍌make the glaze by adding 1tsp earl grey milk with icing sugar until thickened to your desired consistency. 🍌for the matcha butter melt the butter then sift in the matcha, refridgerate to set 🍌 once cooled, slice and enjoy warm with matcha butter and flaky salt . . . . #bananabread #veganbananabread #earlgreybananabread #veganbaking #plantbased

I present to you, lazy girl tiramisu. TIRAMISU BITES ☕️ no need to wait 12hours for tiramisu to set, just make this easy snackable no-bake version x makes 12~ 30g ground almonds pinch of salt @cornishsea_salt 185g oat flour (blended oats) @quakeroatsuk 1 tbsp vanilla powder @biomel.life (or protein powder) 70g smooth nut butter @pipandnut 1.5 tbsp coffee powder + 50 ml hot water 50ml maple syrup @maplecanadauk 2-3 ish tbsp plant milk @plenishdrinks cocoa powder @naturya vanilla cream: 50g soft cheese or mascarpone @nushfoods 110g whipping cream (i used a plant-based one) @flora 2 tsp vanilla extract paste @nielsenmasseyuk 3 tbsp honey or liquid sweetener (could also use icing sugar) to taste @sweetfreedomuk 1/2 tbsp coffee powder ☕️ first whip the cream whipping and vanilla until just stiff then add the cream cheese, syrup sweetener and whisk again until incorporated. refrigerate to set. ☕️ combine all ingredients in a food processor @haieruk and blend until combined ☕️the mixture should come together but not be sticky, add more milk if it seems a bit dry ☕️ roll into 11-12 balls then cover and refrigerate until ready to serve serve ☕️ coat in cocoa powder and dunk in the cream ☕️ store in an airtight container in the fridge (they also freeze and defrost really well!) . . . . #tiramisu #tiramisuballs #easydessert #healthydessert #nobakedessert

excellent use of freewill: BANANA BREAD TIRAMISU using homemade banana bread instead of sponge fingers🙂‍↕️ such a fun twist on my fav dessert banana bread: 170g plain flour 50g spelt/wholemeal flour @dovesfarm 3/4 tsp baking soda 1/2 tsp baking powder 2 eggs or apple sauce (mine weighed 105g total) 100g coconut sugar @thegroovyfoodcompany 2 ripe bananas 150g 60g coconut/non fat-free yoghurt @cocosorganic_ 1 tsp vanilla 80ml neutral oil pinch of salt coffee soak: 2 tbsp instant coffee hot water (350ml) cream: 200g whipped vegan cream 200g cream cheese @nushfoods 50g cane sugar @justnatural_uk 50g maple syrup @maplecanadauk @naturya cocoa powder to dust method: ☕️ bake the banana bread: whisk mashed bananas, oil, salt, sugar, eggs, yoghurt, and vanilla ☕️gently fold in the dry ingredients half at a time (flours, baking powder and baking soda) until just combined (don’t overmix) ☕️ bake in a standard loaf tin in a preheated oven 180c for 55mins ☕️ let cool 10mins, then remove from tin to cool completely for a few hours/overnight in an airtight tin/box ☕️ for cream: whip the cream gradually adding the maple syrup and sugar, until almost stiff. then whisk in the cream cheese until smooth. ☕️ refridgerate until needed ☕️ make the coffee, and let cool. ☕️ assemble the tiramisu! cut 1cm thick banana bread slices, dunk in coffee and layer with the cream mixture into serving dish/dishes ☕️ let this sit in the fridge for a few hours and then sift with cocoa powder to serve :) top tip: bake the banana bread the day before. the flavours will intensify overnight, it will be easier to slice and better for soaking up that coffee flavour #tiramisu #bananabread #bananabreadtiramisu #healthybaking #dessertideas

homemade COOKIE CRISP CEREAL 🥣🍪 essentially mini cookies but made with wholesome ingredients! It’s a labour of love to cut each cookie by hand but quite satisfying and the result is well worth it makes 2 trays~ *100g oat flour (blended oats) @hollandandbarrett *50g wholemeal flour (or plain/other) @dovesfarm *50g ground almonds @hollandandbarrett *1tbsp agave/maple to taste @thegroovyfoodcompany *1/2 tsp salt *35g melted coconut oil @hollandandbarrett *50g runny nut/seed butter (i used @pipandnut almond *110-125ml ish plant milk i used @plenishdrinks soya *handful of mini dark choc chips @vilgain +handful dark chocolate flakes (or finely chopped chocolate bar) @knoopschocolate method: 🥣 combine all ingredients apart from the chocolate in a food processor or blender (i used my @haieruk - it’s so good) 🥣 the dough should come together but not be sticky, if it seems too dry add a splash more milk 🥣 then fold in the chocolate (or pulse for a few seconds with the blender to incorporate) 🥣roll out between baking paper until it’s around 3-4mm thick - the thinner the crispier they’ll be once baked 🥣use a bottle cap lid, or anything small and circular to stamp out the cookies, this part take a bit of patience, repeating until no cookie dough is left 🥣 place into like baking trays (i made about 2 trays) 🥣 bake at 175c for 13-15minutes until golden then let cool 🥣serve with milk of choice and store in an airtight @kilneruk jar for around 2 weeks Can we also ignore that i have choc on my face for half of this video (how embarrassing) thanks x . . . . #cookiecereal #homemadecereal #breakfastideas #hokebaking #healthybreakfast

UPSIDEDOWN PISTACHIO BLACKBERRY CAKE made with the brand new @allthingsdairy__ Low Fat Cottage Cheese. So creamy and versatile, it makes the most tender fluffy cakes 🤝 | AD serves 8-10~ 100g roasted pistachios 155g plain flour 1 1/4 tsp baking powder 1/2 tsp baking soda 100g caster sugar 40g coconut sugar 180g Low Fat cottage cheese @allthingsdairy__ 2 eggs 1/2 tsp salt 1 1/2 tsp matcha powder (optional) for colour 80ml olive oil 1 tsp vanilla extract 300-320g fresh blackberries blackberry compote: 80g frozen blackberries 1 tbsp lemon juice 1 tbsp coconut sugar or sweetener of choice 1 tsp cornflour + 1 tbsp water into a slurry method: 👩‍🍳 preheat oven to 180c and line an 7” cake tin 👩‍🍳blend the pistachios to a fine crumb in a food processor then set aside 👩‍🍳blend the eggs and cottage cheese until smooth 👩‍🍳 pour this into a large bowl and whisk in sugar vanilla, oil and blitzed pistachios 👩‍🍳 separately sieve the dry ingredients (salt matcha, flour, baking powder and baking soda) then fold into the wet mixture 👩‍🍳add the blackberries tightly packed into the bottom of the springform cake pan then add the cake batter on top 👩‍🍳bake for around 50minutes until cake tester comes out clean 👩‍🍳once cool tip upsidedown, slice and serve with the blackberry compote, yoghurt and chopped pistachios *to make the compote, stew the blackberries, lemon juice and sugar until bubbling then reducing to a simmer with the cornstarch slurry for a few mins to thicken @allthingsdairy__ Low Fat Cottage Cheese now available at @waitrose @morrisons and more soon 👀 . . . . #upsidedowncake #cottagecheesecake #pistachiocake #upsidedownblackberrycake #baking

HOMEMADE COCO POPS 🥣 the perfect healthy brekkie, snack or night cap, made in 20minutes honestly I recommend just making this for the chocolate milk because it’s the best part. 170g puffed rice @kallo 3.5 tbsp cocoa powder (i did half cacao) @naturya 3/4 tsp seasalt @cornishsea_salt crushed 55g melted coconut oil 4-5tbsp ish agave/maple syrup (to taste) @thegroovyfoodcompany milk to serve @plenishdrinks 🥣 preheat oven to 180c or 160c fan mix the puffed rice and cocoa powder until well coated 🥣 pour in melted coconut oil and agave and fold until well combined 🥣bake for 12-13 minutes (almost burnt mine lol so defo keep an eye from 10minute mark) 🥣 let cool fully before breaking up and store in an airtight jar @kilneruk 🥣enjoy with milk of choice my fav is @plenishdrinks soya what cereal should i make next? . . . . #homemadecereal #healthysnack #asmr #homemadecocopops #baking

LEMON POPPYSEED SCONES 🍋 warm, golden and buttery, and even better served with @pots_and_co Lemon and lime posset | AD makes 9-10~ 380g plain flour pinch of salt 1 tsp baking soda 1 3/4 tsp cream of tartar 90g stick butter 15g sugar 1 egg 1 1/2 tbsp poppy seeds 2 tbsp lemon juice 190g butttermilk (50:50 milk of choice:yoghurt) zest of 2 lemons blueberry compote: 1 cup frozen or fresh blueberries 1 tbsp maple syrup or sugar 2 tbsp lemon juice 1/2 tsp cornflour + 2 tsp water into a slurry 🍋 sieve the flour, baking soda and cream of tartar and add sugar and a pinch of salt. 🍋stir in the lemon zest and poppy seeds 🍋 rub in the cold cubed butter carefully to resemble bread crumbs 🍋 slowly add the buttermilk and then 3/4 of a beaten egg - don’t mix but bring together into a rough dough 🍋 tip onto a floured surface and roll out flat about 1.5” thick 🍋 cut circles with a cookie cutter and add to a lined baking tray 🍋 refrigerate for 30mins-1 hours to rest 🍋 preheat oven and brush with egg wash (remaining egg + 1 tbsp milk) and bake 220 degrees for 12-13minutes 🍋serve with @pots_and_co lemon and lime posset, blueberry compote and more lemon zest Pots&Co available at @ocadouk and @waitrose . . . . #scones #afternoontea #sconerecipe #potsandco #lemonpoppyseed
