Davis, TX Wine grapes in the high desert? Yes, it’s a thing, and you can check it out here. Alta Marfa sources their fruit from vineyards in Texas and New Mexico. They’re non-interventionist winemakers, relying on spontaneous fermentations (i.e. no added yeasts), and their wines are never fined, filtered or acidified. This winemaking style matches up perfectly with guest chef Dylan McShan, whose preferred cooking method involves open flames. Dylan earned his chops in kitchens from Houston to New Orleans to the San Francisco Bay Area, including stages in NOLA’s August restaurant and David Kinch’s Manresa. Applause for the Cause: Benefit dinner at Gruene Hall hosted by @robertearlkeen1 . It was a true honor to be asked to take on this dinner and help raise a Texas sized amount of money for flood relief @cftexashillcountry Huge thanks to @heb for graciously donating the food, to @evan_tate and @melissatatetx @sausage_sensei for bringing the extra firepower it was an honor to cook alongside yall, and to all the family and friends who carved time out of their busy schedules to lend a hand. “I’ve never really had a family. I don’t know my biological parents, I don’t know half my family. I have two biological sisters, the last time I saw them was on their birthday and I never saw them again..” ❤️ said Enoch, a 14 year old boy in Texas foster care. Enoch says that cooking 🥘 has brought him comfort while he waits in foster care for a forever family.
