Wine grapes in the high desert? Yes, it’s a thing, and you can check it out here. Alta Marfa sources their fruit from vineyards in Texas and New Mexico. They’re non-interventionist winemakers, relying on spontaneous fermentations (i.e. no added yeasts), and their wines are never fined, filtered or acidified.
This winemaking style matches up perfectly with guest chef Dylan McShan, whose preferred cooking method involves open flames. Dylan earned his chops in kitchens from Houston to New Orleans to the San Francisco Bay Area, including stages in NOLA’s August restaurant and David Kinch’s Manresa. Now back in his home state, Dylan rolled up with a big load of firewood to get the party started in Texas’ high desert country.
