On a winter evening this week at the Wythe Hotel (@wythehotel ) in Brooklyn, we gathered hoteliers, founders, operators, and travel journalists not to celebrate sustainability, but to question it. Our NYC Salon was designed as a space for something deeper. Regeneration as responsibility, not status. Across two panels with hotels @songsaaprivateisland @herdadedacortesiahotel @antara.cruises @boardwalkhotelaruba @hamanasi_resort @chhahari.retreat supported by the @arubatourism and a curated trade matchmaking format, we explored what regeneration actually demands. Place-led thinking, long-term accountability, structural integrity, and experiences that shape behavior without preaching. What emerged was not a framework or checklist, but a shared understanding that regeneration is lived, relational, and evolving. Most importantly, the format mattered. Journalists did not receive pitches. They had conversations. Independent hotels did not simplify their work. They shared its complexity. That is how trust is built, and how narratives shift. CĂĄ ChiĂȘn BĂĄnh Hỏi: whole fried fish, Vietnamese style, by @trinheatss of @littlefishphilly . It's a whole Thai snapper, crisp outside, soft inside. Served with fresh herbs, lettuce, rice noodles, pickled daikon & lotus root, plus funky mam nem and muoi ot xanh sauces, it's terrific. I had the great pleasure of experiencing the fish as just one wonderful course of many, by great Philly chefs, popping up for @visitphilly at @beardfoundation . I love this venue, the classic 1841 townhouse where James Beard hosted parties and championed vibrant, sustainable eating. It's so much fun watching chefs collab in the little kitchen. This one, curated by @binh_4thewin , was particularly joyous & communal. Here's the rest of the menu: - Babi Guling, a Balinese-style roasted pork belly by Chef Diana Widjojo of @ricensambal . Diana's family owned one of the first Indonesian restaurants in Philly. They roasted pork belly for special occasions. This one, with jackfruit lawar-spiced coconut salad & a side of butterfly pea flower jasmine rice, is amazing. - Pinakbet, a vegan variation of a Northern Filipino comfort dish, by @raqcityy of @babysphl . Made with SautĂ©ed kabocha, eggplant, okra & green beans, this is wonderful, with rich Umami from miso & mushroom bagoong, plus Texture from fried okra & leeks . - Chicken over rice, stewed spicy, in southern Philippines street food style wraps - Fish on lemongrass skewers with tangy jaew dipping sauce - Sweet coconut sticky rice filled with grilled banana, topped with kluwek sauce (almost chocolate) and candied nuts We love Philly and visit often. The food scene is a big part of it - and Southeast Asian flavors are prominent in the mix. Immigrant vendors started selling in FDR Park in the 70s. Now, @seamarket_fdrpark is a community center and amazing food space. So much happening! This is why I eat salads every day. I was very fortunate to attend a one-night-only dinner at Minibar in D.C. recently, hosted by Estrella Damm. The inimitable JosĂ© AndrĂ©s cooked along with Eduard Xatruch of Disfrutar in Barcelona, named World’s Best Restaurant in 2024. It was mind-blowing. How so? Mane they had endless Estrella, wine I probably will never have again, “coco” bread with black truffle and burrata, abalone shiitake, pesto w/ pistachio and eel, a literally golden egg with a surprise yolk, Catalan-style squab, and other stuff I want to have at least once a year if at all possible. SHEESH. Not everyone can cook like this. That said, it’s hard to appreciate this level of culinary brilliance without knowing and loving everyday meals. Understanding why the basics are beautiful in their simplicity is part of what makes nights like these one truly special. Also I learned that JosĂ© AndrĂ©s LOVES John Steinbeck and abalone.
