My new favorite way to eat dumplings, plus a trick you can use with any filling or meatball. Recipe below 👇
Filling:
1 lb ground pork, 1 cup napa cabbage (thin, squeezed dry), 4 green onions, 1 tbsp ginger, 3 cloves garlic, 1 cup mushrooms, 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp sesame oil, 1 tbsp Shaoxing wine, ½ tsp salt, ½ tsp white pepper, ½ tsp MSG
Broth gel:
1½ cups chicken stock, 1 tsp soy sauce, 1 tsp gelatin
Bring to a boil, kill the heat, whisk in gelatin, chill until set
Mix the filling until it tightens up.
Wet wonton wrappers and layer with the filling and broth gel until used up.
Steam over simmering water, 25 minutes. Rest, then slice.
Finish with scallions, chili crisp, sesame seeds, and black vinegar #chef #dumplings

1¾ cups coconut milk
3½ tablespoons green curry paste, store-bought or homemade
1 tsp Knorr Premium Roast Chicken Base + 1 cup water
2 chicken thighs, skin on
2 tablespoons palm sugar (or light brown sugar)
1½-2 tablespoons fish sauce, to taste
4 makrut lime leaves (kaffir lime), torn or thinly sliced
1 cup Thai basil leaves
1 can bamboo shoots, drained
¼ red bell pepper, julienned (for color and crunch)
Jasmine rice, for serving
Instructions:
Add 2 tablespoons of neutral oil to a saucepan Sear the chicken skin side down until crispy
Sauté the curry paste:
In a medium saucepan, heat 1 tablespoon of neutral oil, add the curry paste for 2-3 minutes until fragrant. Tip in the coconut milk over medium heat until it starts to simmer
Add the cup of water and bring to a simmer, tip in a teaspoon of Knorr Roast chicken premium Flavor Base, whisk to combine
Add chicken thighs and cook 20 minutes
Season and add aromatics:
Stir in palm sugar, fish sauce, and lime leaves. Simmer another 10 minutes to blend flavors.
Finish with vegetables:
Add bamboo shoots, red bell pepper, and Thai basil. Simmer for 2-3 minutes until warmed through and aromatic.
Serve:
Ladle over steamed jasmine rice and serve hot
