The Good, The Bad, and The Weird: David Abalayan "Cause you make me feel like, I've been locked out of heaven," David Abalayan croons, delivering his best Bruno Mars impression with zero conviction. "No, I can't sing. I can't dance. I can just bartend!" he admits. At least he does that really well. As beverage director and bar manager at No Entry — Apl.de.ap's below-ground BGC speakeasy — Abalayan has built a beverage program around precision and 24-hour prep methods that deliver fuller flavor and texture without shortcuts. The approach also earned him unanimous victory at the 2025 Monkey Shoulder Ultimate Bartender Championship Philippines, where his speed, consistency, and attention to detail outpaced the country's best. It's not his first title. In 2019, Abalayan took the Diageo World Class Philippines crown and competed in Scotland. No Entry is packed most nights. True to the name, there's often no space. "Turning guests away? I have to say good," he muses, "but only because they'll get a better experience next time." When he's not behind the bar, Abalayan identifies as a lumpia and cheeseburger specialist. "I used to sling burgers during the pandemic," he laughs, though these days he's fully focused on his craft. That doesn't include getting tattoos with his contemporaries, despite offers. "Tom from Vesper, Normy from Sago House — I'm sorry," he pleads after backing out of appointments to get matching ink.

David himself has become one of the city’s quietly influential young bartenders, thoughtful in both flavour and philosophy. On the other end of the call is Nguyen Vu @19.blume , a promising young bartender from Hanoi’s Réno Bar, and one of the 𝐂𝐚𝐦𝐩𝐚𝐫𝐢 𝐑𝐞𝐝 𝐇𝐚𝐧𝐝𝐬 𝐕𝐢𝐞𝐭𝐧𝐚𝐦 𝟐𝟎𝟐𝟓 finalists. Dialing in with the mix of curiosity and ambition that defines the new wave of Vietnam talent. Their conversation kicks off with the big question: How do you make Campari feel genuine in our context — without pretending we’re all sitting in a piazza in Milan? David doesn’t hesitate: Have a purpose. Know your story. Let the drink come from something real — something you watched, read, felt, or lived. If the meaning is true, the drink will follow. And when Nguyen Vu asks whether the Italian aperitivo spirit can belong in Asia, David answers with a calm, confident yes. No Entry Club in Manila shapes its evenings around a slower, more deliberate rhythm, and the inclusion of live music strengthens that character. The room sits in low light, dressed in deep tones and clean lines, and the energy builds through performance rather than volume.
