Mr Cillian John Aubrey Ottaway arrived 8th March. He has been a great addition to our lives.

We are delighted to welcome Chef Dan Ottaway to our community of chefs, cooks, and producers.
Dan is the Executive Head Chef at Tulfarris Hotel and Golf Resort in Blessington, Co. Wicklow.
Originally from Kent, England, Dan began his culinary journey at Thanet Catering College, before progressing to Deesonâs in Canterbury. His career has taken him through Michelin-starred kitchens and prestigious London institutions, including Brasserie Chavot, the Wallace Collection, Buckingham Palace, the Royal Academy of Arts, Selfridges, Ascot Racecourse, and the London 2012 Olympic Village. He has also cooked at Bennelong at the Sydney Opera House in Australia.
At Tulfarris, Dan leads the kitchen with a strong focus on seasonal, locally sourced ingredients, working closely with Irish farmers, growers, and artisan producers.
