There’s no question that preparing and serving tasty school meals that kids enjoy at scale is truly challenging, but through thoughtful collaboration between committed partners, we hope to show what’s truly possible!

Yesterday, the Cypress School District Child Nutrition Services Team along with @brigaid Chef @gaytan79 served up these beautiful salads with some tasty scratch made focaccia!
I often hear from chefs that they think the chef positions @brigaid is hiring for in institutional food spaces sound very cool BUT they aren’t for them right now.
It seems like many of these chefs that I talk to about this are just not ready to leave the restaurant world and way of life just yet. And I completely get that!
That said, if you are interested in the institutional food space, you can leave restaurants for a little, check out the institutional food space and always go back to restaurants if you want to!
Honestly, there is so much to learn in the institutional food space that can be applied to other foodservice environments like restaurants. The process of navigating what are very unique challenges in this world leads to so many important and useful learnings.
I have always believed that having a variety of experience in different foodservice settings is so important to becoming a well rounded chef that can step into any kitchen and be successful.
@brigaid currently has four open school-based chef positions, one in Massachusetts and three in California.
Why not come and give the institutional food space a try!

Making ScruPPiciata(sound up to hear the spelling discussion 😂) with Zio and Zia!
Basically homemade Concord grape jam with the addition of toasted almonds, orange zest, sweet vermouth and chocolate!
Zia serves it between some freshly made pizzelle for a really specially treat!
Chipotle Chicken Caesar Salads featuring a blend of romaine lettuce and shredded red cabbage, pico de gallo, a jalapeno-corn relish, crispy tortilla strips and Cilantro Caesar dressing are being tested for a spring menu debut in Fillmore Unified School District!
