@chefsamkowal tried her first chopped cheese during last year’s Brigaid Summit in NYC.
Since then, she brought our recipe for the sandwich, which we developed in @nlpublicschools (CT), to @uplandunifiedsd in CA. Over this year’s spring break, she got to work testing the recipe so that it can be featured in next year’s menu.
It’s awesome to see school lunches travel across the country so that kids in one state can enjoy a recipe that originated in another state.

When they’re on the menu at Fresno High School, the @fresnounifiednutritionservices team serves between 1,000 to 1,200 in a single day!! And they’re just ONE of many options for students to choose from!

Chef @jtown_chef and the @mhusdnutrition team in @mhunified are having fun with R&D!
In this picture, they tested a pre-brined, netted turkey breast from @creamco_meats which the team may use as a possible deli turkey option. They tried out various rubs as well as a plain option.
They also worked on a house-made chocolate hummus. While Chef Joel has been skeptical of chocolate hummus in the past, he admitted “it reminds me of brownie batter!”

PSA: Including pre-made/packaged items on school lunch menus is not an “easy way out” for foodservice programs.
In many cases, these items may be the best solution. Sometimes, packaged foods yield a better product than what can feasibly be made in a kitchen that’s serving hundreds, if not thousands, of students with limited equipment (e.g., bagels, French fries). Other times, an operation may not have the capacity to prepare the product in house at the moment, even if it plans to one day (e.g., raw protein).
Regardless, a lot of work still goes into ensuring that when packaged products are served, they’re the highest quality possible. Just take a look at all the attention to detail in @alumrockunion , where Chef @its_maddy_foo is helping the foodservice team test different methods of cooking their frozen cinnamon rolls and develop SOPs to standardize preparation across sites. They’re definitely not taking the “easy way out” here!

Breakfast just got a little more exciting in Gonzales Unified School District!
These handpies are made in house, using pizza dough. The filling is versatile, so that the team can utilize the canned fruit it currently has in stock. In this case, it was apples.
The sprinkle of sugar on the top adds just enough sparkle and sweetness to start the day off on a great note! We look forward to hearing how the team continues to refine the recipe! ✨
The foodservice team in Cypress School District is now cooking chicken from raw in their central kitchen!
They worked with Chef @gaytan79 to come up with two new menu items to feature chicken: Fresh and colorful salads with tomato, egg, cheese, cucumber, and focaccia as well as BBQ chicken wraps. We can’t wait to hear what students think!

Located on Cape Cod, @riverviewschool provides a transformative educational and residential experience for over 200 students with diverse learning needs.
We’re looking for an ambitious chef to lead our work with the school. This is an exciting opportunity for many reasons. First, in addition to helping elevate the quality and consistency of their existing foodservice program, you’ll also spearhead their transition to a full commissary model as they open a second campus to support an adult residential community for Riverview graduates. This second campus will include a central kitchen which will serve as the operational hub, producing lunch and dinner seven days a week for up to 200 community residents while also supplying the school’s kitchen with bulk prep and partially finished meals. Second, because this is our first partnership in Massachusetts, you’ll help us expand our reach and network in a new area of the country.
