Spent months watching tik tok and the craving for the viral carrot kimchi and syrniki (something I’ve never had before) hit HARD. This market was absolutely beautiful and their products were delicious. Definitely worth the parking ticket 🥴.

Just another day at #theinstituteofculinaryeducation. We fabricated veal, roasted the bones for brown stock, and made some very interesting looking sweetbreads. Since I was a child I always wanted to try them because I saw them used on #chopped so frequently. Once it came time to test my gangsta, I bitched out 😂.

A little chicken fabrication lesson before our practical. Got a 96 (I left the oyster on on the carcass 🥴) then had the greatest time working the @cityharvestnyc fundraising event. Culinary school has been one of the greatest decisions of my life, not just in sharpening technique in skill, but it’s where I met the ten people whom I’ll never forget. To say I completely fell in love would be an understatement.
On another note, if you’re a culinary student or are in the midst of becoming one, my one piece of advice would be to always always always sign yourself up for the volunteering events. I can’t begin to tell you how working these events and networking has led to meeting chefs that I’ve idolized (like Ron Ben-Israel) since I was a little girl. Working side by side with them in some of the most exclusive venues in NY has been a dream come true.

And here ladies and gentlemen is where I developed a new found love of lamb. Also I’m forgetting which lesson I’m up to at this point, so from now on it’ll be a little BTS of what went down in our class kitchen. Some days were recorded, other days we were hauling assing to get the assigned dishes done. I know it’s a little chaotic and messy, but such is my life. Enjoy the mini mashups ❤️
