'De keuze voor het juiste mes is al even cruciaal als die voor een levenspartner', lacht Thomas Troupin van ¡Toma!. Daarom laat de sterrenchef zijn gasten bij het begin van het menu al een mes kiezen van messenmaker Clem Vanhee. De gast beslist of hij er boter mee smeert of vlees mee snijdt. Wat Troupin het meest verbaast, is hoe het mes in de hand ligt: 'Ze zijn allemaal naar hetzelfde ontwerp gemaakt, maar hebben hun eigen vorm en karakter en toch hebben ze de juiste balans.'
Opmerkelijk, want Vanhee maakt elk mes met de hand, uit één geheel van roestvrij staal. 'Dat doe ik zonder kaliber, maar uit de losse pols, op gevoel. Een kaliber geeft meer ze-kerheid, maar het zou me beperken. Vergelijk het met een stok: boven of onderaan voelt die veel zwaarder aan, maar in het midden ligt die licht in de hand', legt Vanhee uit.
Wie verslingerd is aan het mes, mag het na de maaltijd aankopen en mee naar huis nemen. Elk mes is genummerd en heeft een gesmede stempel van het restaurant.

The handle of this knife is made from birch wood sourced in Fratin, a place close to his past, and now also close to my story, where I spend time hunting.

I am proud to create custom knives for Menssa, the Michelin-starred restaurant of Chef Christophe Hardiquest. A place where precision, creativity, and identity come together on every plate.
For this piece, we translated that philosophy into form. The handle is made from a branch cast in bronze, raw, organic, and refined at the same time. A quiet tribute to nature, transformed into something enduring.

“I admire our Belgian craftsmen, and I also promote them when I travel abroad,” he says. I love everything Belgian and want to make Belgium 'shine' beyond its borders. I like working with restaurants. It is very important that I can talk to them first. The central question is what exactly you want to do with that knife. The approach will be different each time. A design is then made based on the needs. All knives come with a lifetime warranty, including a free annual sharpening service. The knives are also numbered and can be personalized. For myself, I know that my customers have an eye for detail. Such as chef @timonmichiels from @carcasse_by_dierendonck , with whom I am currently working on the knives for the new restaurant in Knokke.
“I do 'everything' with him when it comes to knives, because it is a 100% Belgian company,” says Timon Michiels. I also like his method of starting a new knife from scratch in his garage in Gullegem.
