The theme was nostalgia. This was my first attempt at a ”trompe-l’œil” style dessert. But more than technique, this was about memory. Filter coffee has always held a quiet significance for me. Growing up, many of my weekends were spent at my grandparents’ home. Sunday mornings began early. My grandmother would wake me with a cup of coffee ..far too sweet, but exactly what I needed. Soon after, my grandfather would take me to Lalbagh for a walk at Tiffin at Brahmin’s Coffee Bar. That was part of the ritual. Always. This dessert comes from those mornings. From that first sip of coffee. From a time I didn’t realise would one day become something I’d hold on to. A quiet thank you to @choco_chits and @lottechocolat for making me a part of such fun event. The past few weeks have been incredible! I’ve had the chance to meet and work with some truly amazing chefs in the Niagara region. Their passion, creativity, and skill are just inspiring! During the workshop, we played around with local gems like ice wine and Niagara peaches, bringing a taste of the region into our pastry creations.
