Bored of health food that tastes like a punishment? This is for you. This is my version of larb with pork and carrot — a Thai-Lao dish, one pan, twenty minutes, and one of the most genuinely glow-supporting meals I make with the smart swaps with lean pork, carrots and cold pressed rapeseed oil. The five grated carrots are doing the work of an expensive vitamin A serum. The lime juice activates the collagen-building potential of the protein. The toasted rice powder is the chef move that makes the whole thing taste restaurant-quality. This is the food I eat when I want to feel like myself. Not less. Not restricted. Just genuinely well fed. Recipe serves 2 hungry people: 1 tbsp rice (I used sushi but you can use jasmine) 1 tbsp cold pressed rapeseed oil (@mellowyellowkitchen ) 500g 5% pork mince 1/2 tbsp sugar / honey 1 tbsp fish sauce 1 tbsp light soy sauce 5 carrots; peeled and grated 1/2 shallot handful of coriander, mint, spring onions; chopped 1 birds eye chilli; sliced 2 limes; juice 1. toast the rice in a dry medium-hot pan then grind into a fine powder 2. in the same pan heat oil and brown the meat on high add 90% of the rice powder sugar, fish sauce and soy sauce and cook down 3. add the carrots and soften 4. add the rest of the herbs, chilli and lime juice reserving half a lime to serve 5. Enjoy with a sprinkle of the rice powder and lime juice I’m sharing the food that’s making me feel confident on my way to becoming a 2027 bride — follow for the rest of the journey. First regatta completed ☑️ We 100% lost to some very strong 18 year olds well done ladies. Conditions were awful be we still finished. Happy to have done it and got the onsie out. If you’re wondering about the porridge recipe 🥣 It might loom like a cross between cat sick and some oliver twist slop but actually tastes alright and more importantly oats move boats. Large handful frozen bluebs 300ml Milk of choice Large handful oats 1 scoop @theorganicproteinco unflavoured whey 1 large tbsp of 0% @skyryoghurt Drizzle maple syrup Sprinkle of @waitrose high protein nuts & seeds granola I normally premix the protein powder with the milk before adding to the bluebs and oats but tbh was nervous and worried about grtting to the boat in time.

If you’re bored of health food here’s a different version of chicken and broccoli 🥦 that is actually tasty. Recipe 2 For the chicken: 2 chicken breast 1 tbsp @ottolenghi rose harissa paste the dream Pinch of salt 4 sprays of cold pressed rapeseed oil For the pasta: 1/2 onion diced 2 garlic cloves Little pack pancetta 1 head of broccoli Half box of @waitrose high protein pasta the dream! For lemon drizzle: 2 tbsp half half creme fraiche 1/2 lemon juiced Black pepper 1. Marinate the chicken in salt and harissa for 30 mins then cook in a pan i like to use the @thechefspress weights cook on medium 2. Blend the broc into a fine crumb you could chop this but cba. 3. Cook onions and garlic in salt and oil add pancetta and cook until crispy and onions are soft, add the broc and cook through. 4. Cook the pasta in salted water and add to the broc with a little pasta water 5. For the creamy dressing add creme fraiche, lemon and black pepper and mix 6. Slice the chicken and serve with the pasta and a drizzle of the creamy dressing. Hope you enjoy and wish me luck in the race. I’m going need it as stroke! 💪💪💪💪

One of my new weekly habits Firstly it’s super tasty even Tom loves it. Bone broths in the supermarket but is often £5 for only 324ml. I simply get a pack of chicken wings stick them in the airfryer and then roast until golden brown. simmer them on low for 12 hours this extracts all the collagen and flavour. Top tip fill your roasted chicken airfryer with water to remove all the chicken roasty goodness and add it to the pot. Strain it and chill for about 2l of bone broth and i’m glowing all week ✨

Holiday snaps 📸 Maldives 🇲🇻 We were on the most fab boat sister to the boat in Raja ampat. where we fell in love with live aboard scuba diving @scubaspamaldives . their hospitality is 10/10. there is a separate boat for your scuba kit, think beach bbqs on sand bars, post dive jacuzzi, sunrise yoga also it has a full spa - not a massage gal but got a pedi. We did the deep south trip which is all about big sea life highlights we defo the tiger sharks and whale sharks. Then headed to their sister resort in north maldives @kuredhivaruresortandspa just to chill for 3 days after diving. again fantastic. Over water villas with a viewing glass in the suite. The bathroom was the size of the bedroom huge walk in wardrobe private pool and hammocky thing. Our villa felt private too. The food again fab madivian lobster and tuna coconut curry on repeat. We love dive boats as you get the best dive experience, get up super early so don’t have time for jet lag, the diving tires you out so early bed. You don’t have to stress about holiday planning as they do everything and i mean everything for you. The resort was for 3 days but tbh not resort people as like to explore and tried different experiences and food. #maldives #scuba #sharks

Feally fun seeing marcus, monica and matt, being completely honest was still crazy nervous stepping back in the MC kitchen nothing quite gets the adrenaline going like the MC kitchen @marcuswareing @galettigram @matt.tebbutt A few behind the scene snaps of the filming process and shout out to the whole team ❤️❤️❤️ you’re the best! MasterChef Professionals Skills Test Chicken Wings Stuffed with Thai flavoured pork mince and soy caramel sauce @masterchefuk 🐔 Ingredients: • 2 chicken wings (middle and drumette section) • 100g minced pork (high-fat content) • 1 small garlic clove (minced) • 1 tsp fish sauce • ½ tsp sugar • Pinch salt • 1 spring onion (finely sliced) • ½ red chilli (optional – finely diced) • 1 tbsp coriander stems (finely chopped) add more herbs like thai basil and mint For dipping sauce: • 1 tbsp fish sauce • ½ tbsp lime juice • ½ tbsp palm sugar / brown sugar • ½ small red chilli (sliced) 👩🏻‍🍳 Method: 1. Debone the wings by pushing out the bones from the smaller end — keep skin intact. 2. Mix pork, garlic, fish sauce, sugar, pepper, chilli, spring onion, coriander stems. 3. Pipe or spoon the pork mixture into wings and secure with a skewer or cocktail stick. 4. Pan-fry in oil, turning regularly until golden and cooked through (or shallow-fry for crisp skin). 5. Mix dipping sauce — dissolve sugar in fish sauce/lime juice and stir in chilli. 6. Serve hot, sliced in half if you want to show that stuffing!
