What the public doesnโt see is the building of the foundation. Financials, projections, leases, deals, construction costs, purchasing every napkin, fork, glass and seat. While the public attributes a restaurantโs success to its hype, food, bev and service, which all obv matter, it wonโt succeed without very smart planning. Managing every aspect of the project, understanding all the aspects from experience and setting it up properly for long term viability. If the foundation is rotten , it will crumble.
