Simple meal from @selerakitchennyc , made with love and perfect for springtime. Mildly spicy with chicken, chayote, carrots, aromatic spices, and coconut milk, served with white rice and shrimp crackers. Comforting, flavorful, and satisfying. Simple Chicken Curry with Vegetable Ingredients: 2 chicken breasts, cut into small pieces 2 chayote, peeled and cut them like thick matchsticks 1 carrot, sliced and cut like thick matchsticks 1 1/2 cups of coconut milk (you can use 400 ml can) 2 cups water or chicken broth 3 cloves garlic, minced 4 shallots, sliced 2 red chilies (optional) 1 lemongrass stalk, lightly pounded 3 kaffir lime leaves (optional) 3 bay leaves 1 tsp coriander powder 1/2 tsp turmeric powder Salt and sugar to taste 3 tbsp Cooking oil Fried shallot Shrimp cracker Instructions: Heat a cooking oil in a pot. Sauté garlic, shallots, and chilies until fragrant. Add chicken and cook until lightly browned. Stir in coriander and turmeric powder. Add water or broth, lemongrass, and kaffir lime leaves. Simmer for 10 minutes. Add carrots and chayote. Cook until tender. Pour in coconut milk and stir gently over low heat. Season with salt and a small pinch of sugar. Simmer for another 5–10 minutes without boiling too hard so the coconut milk stays smooth. A heartfelt thank you to the teamwork, the founder, amazing chefs and staff from League of Kitchens for bringing such warmth, culture, and joy to the Bar Mitzvah Interactive Demo Party at Brooklyn Grange. It was a truly meaningful celebration filled with laughter, learning, and connection. Watching children and their parents come together to roll and cook Klepon was such a special experience. The hands-on interaction created unforgettable memories for everyone who attended, and the excitement on the children’s faces said it all. The event beautifully combined tradition, community, and fun in such an engaging way. There’s a kind of ✨magic✨ you can only find in the early mornings of Indonesia. Rows of colorful sweets-soft greens putu ayu, deep purple ube crepes, and aromatic coconut and pandan cakes. Each one handmade, each one carrying a story. These are called “jajan pasar”. They’re not meant to be fancy, they’re meant to be shared. Sweet, soft, slightly chewy- familiar in a way you can’t quite explain unless you’ve grown up with them. And that’s why I want to SHARE these flavors with you!
