If we were going to do a burger at The Grill, it had to be iconic.
At the centre is a bespoke 180g O’Connor beef patty developed over months by Culinary Director @chefjoelbickford alongside @askthebutcher_ and the @oconnorbeef family - two of the biggest names in Australian beef.
The blend remains a closely guarded secret, but the brief was simple: richness, structure and savoury depth in perfect balance. The result is a burger with remarkable juiciness, clean beef flavour and a long, savoury finish.
Aged Australian cheddar and American cheese for depth and melt. Traditional burger sauce because some things are already perfect. Thin-cut pickles for balance and acidity.
Then there’s the onions.
Inspired by our recent trip to Cognac, Joel returned focused on that classic French combination of caramelised onions, green peppercorns and cognac. The onions are cooked slowly until deeply amber before being flambéed with Hennessy XO and green peppercorns — the alcohol burning away to leave warmth, subtle oak-driven savouriness and gentle spice that carries through the beef.
No gimmicks. No shortcuts. Just a considered restaurant interpretation of a classic.

Hidden behind mirrored doors, the Clocktower Bar opens from 7.30pm for a three course dinner by Culinary Director Joel Bickford and Head Chef Jarrod Walsh.
Polished timber, plush velvet and a low amber glow set the tone. The room moves with a private club rhythm as Sydney’s best DJs soundtrack the evening.
A social, two hat dining experience designed to unfold slowly.
