A beautiful extraction from my twenty year old Rancilio Silvia V1. No PID or mods of any kind.
Recipe: 1:1.5 20g in, 30g out in 32 seconds
Coffee: El Salvador Black Honey that I roasted five days ago.
Grinder: Niche Zero set to 18.5
Puck Prep: Direct dosed, WDT, distributed with OCD, tamped with Espro calibrated tamper (30lbs).
Slight over-extraction from the back right where the shot started. Didn’t affect the flavor though.
Super sweet with a good amount of fruit, syrupy body and beautiful clarity.

Here’s a few glamour shots of my new Niche Zero grinder. So far I’m loving it. The Niche lives up to all the hype and is well worth the two month wait to get one.
My espresso shots have been super consistent with beautiful clarity and balance, and I find the conical burrs really accentuate the fruit character in lightly roasted washed coffees.
The construction is rock solid with everything hand-built with premium materials. For espresso I’ve just barely entered the espresso range on the Niche with most of my shots ground between 18 and 20 on the adjustment collar, depending on dose and roast level, so there’s loads of room to go finer.
The grounds are fluffy and light with no clumping whatsoever. I direct dose into my portafilter with the ‘Decent’ funnel attached, there is a slight bit of static but I WDT as part of my puck-prep anyway so it’s not really a concern.
If anyone is on the fence about buying one I’d say go for it. In the Niche you get a commercial Mazzer Kony burr-set, stepless adjustment, extremely low retention, brilliant design, rock solid build-quality and gorgeous looks...for the money I really don’t think you could do better.

I’m loving my new Kruve Propel Espresso glasses. They highlight the subtlest flavours in espresso, particularly with very lightly roasted washed coffees. The difference is staggering... It’s very much like drinking wine out of a juice glass for your whole life and suddenly discovering wine glasses.😳🍷

The more I roast on the @hiveroaster the more impressed with it I become. The fact that I can hit all of the same roast markers that I would on a commercial machine using a $70 roaster blows my mind.
This Tanzanian Moshi developed beautifully on the Hive. It cups super clean with a bright acidity and a nice caramel sweetness.

Alright...why doesn’t Bonavita promote the fact that their brewers have this kind of versatility?
This is their cheapest brewer, the Metropolitan and it works perfectly with all of these drippers. The flow rate and temp are bang on consistent (201°F) plus it has built in pre-infusion.
The Chemex is an 8-cup, the 6-cup works too but the eight sits perfectly on top of the rim around the burner plate so it’s not sitting directly on it.
The server that I use with the V60, Kalita and the Oxo is the Hario 02. It sits on the inside lip of the rim, bit again it’s not sitting directly on the burner.
Both the Chemex and Hario server are very stable on the Bonavita.
I use the V60 most of the time. There’s the perfect amount of room between the spray head and the dripper to give the coffee bed a quick stir during the pre-infusion pause. I’ll even give the V60 a spin or towards the end of brewing to ensure a flat bed during drawdown.
The stir isn’t possible on the Chemex but I do give it a spin towards the end of brewing.
With the Oxo and Kalita there’s loads of room to stir, and I go a bit courser on the grind for these because of the added turbulence you get from the water falling a bit more vigorously. The ‘cupcake’ style filter works well because the spray head on the Bonavita is pretty much the same diameter of the central part of the filter, so you get good coverage.
I’ve had some of the best cups of coffee I’ve ever had brewing with the Oxo. It really is a fantastic dripper.
Don’t get me wrong, on the weekends I still use my Hario kettle and scale, but during the week this is a very convenient way of getting a great cup.
It’s kind of like a Chemex Ottomatic for a fraction of the price.
