Some collaborations just make sense. Others feel like they’ve been waiting to happen for decades. Deep Cuts is both. Born out of our Pourtlandia Project - a mission to reconnect the creative heartbeat of this city - this release brings together the crate-diggers at Music Millennium, the craft obsessives at Baerlic, and our own never-ending pursuit of flavor, story, and discovery. Timed for Record Store Day 2026, this beer is our love letter to the tracks you don’t always hear first - but never forget once you do. We built Deep Cuts like a perfectly curated record bin. The base lays down clean and crisp - American 2-row and Pilsner malts forming a bright, balanced backbone. Then the hops come in like layered instrumentation: Centennial and Simcoe bring structure and lift, while a special late-addition of Crosby’s Deep Cut Cascade turns the dial toward something deeper, more expressive. What hits your palate is a composition of orange zest and grapefruit up front, followed by waves of peach and soft tropical fruit, finishing with a whisper of pine and just enough malt to remind you you’re still in the Northwest. That Deep Cut Cascade matters. Grown just down the road in Woodburn by Crosby Hop Farm, these hops are left on the bine longer - pushed past the typical harvest window - to develop amplified citrus and stone fruit character. It’s a small decision with a big payoff. Like letting the needle ride just a little longer into the groove. At 6% ABV, Deep Cuts is as approachable as it is intentional - a beer built for flipping records, chasing flavors, and finding those unexpected moments that stick with you. Because whether it’s music or beer, the real magic isn’t always in the hits. Sometimes, it’s in the deep cuts.
