Ingredients:
1 tbsp instant coffee
½ cup (120ml) boiling water
1 cup (200g) granulated sugar
½ cup (130ml) extra virgin olive oil
3 eggs (room temperature)
¼ cup (50g) dark chocolate, melted
1 tsp vanilla bean paste or extract
¾ cup (75g) dutch
processed cocoa powder
1¼ cup (132g) almond meal/flour
½ tsp baking soda
½ tsp kosher salt
for serving: whipped cream, berries
Steps:
1. preheat oven to 350F and grease an 8” cake pan
2. mix together boiling water and instant coffee and set aside to cool
3. in a large bowl, whisk together the sugar and extra virgin olive oil
4. add the eggs into the sugar and olive oil mixture one at a time, whisking to combine in between adding the next egg. add the melted dark chocolate and vanilla bean paste/extract and whisk until it’s all combined.
5. in another large bowl, whisk together the almond meal, cocoa powder, salt and baking soda until there are no lumps.
6. add half of the dry ingredients to the wet ingredients and whisk well to combine. add the second half of the dry ingredients and mix until incorporated, it will be thick. add in the coffee and whisk until everything is well combined and the mixture is smooth and glossy. pour batter into the prepared cake pan.
7. bake the cake for 40-45 minutes, until the top is set and the edges look firm. a cake tester will come out mostly clean with a few crumbs.
8. run a knife around the sides of the cake and let cool for about 15 minutes. after 15 minutes, flip cake onto a wire rack to continue cooling.
9. once cool, serve with whipped cream and/or berries or jam and enjoy.
