big step forward. . my capstone project - using Wickerhamomyces anomalus for microbial control has been approved and is now moving into field testing in Rwanda @bahocoffee @wilden_pretorius this hasn’t been easy. . balancing time, work, lots of readings, studying and researching. . just now realizing its not as simple as it seems. . the deeper you go, the more you see how much we still dont understand. . today’s discussion has been more fascinating, diving deeper into the world of yeast, bacteria and molds - i feel like they’re more like the movie - The Blob - unseen, active and they’re everywhere. . but in reality, they are complex microbial communities shaped by environment and process. . fermentation is not a shortcut to quality. . it is - Biology + Environment + Process understanding that system - that’s where real progress begins. .

With coffee, every place we go becomes a home — especially at @dayebensacoffee , where our close friends @keneandukamo & the rest of the Dukamo family always make us feel welcome. So, alongside our latest cohort from the @thecqi Post Harvest Processing Arabica Professional Course, we made Daye Bensa’s Gatta Farm in Ethiopia our base of operations for six wonderful days. It was a week of coffee theory and hands-on coffee processing, guided by Q Instructor @castletonbryce and Archers Head of Education @_daveperalta . More than that though, it was a time to celebrate the joy of coffee through community, complemented by morning brews, shared cuppings, regular check ups on their coffee processing batches, and evenings around the bonfire. Of course, we couldn’t neglect the learning, so leading up to their final exam, our students explored the intricacies of the coffee supply chain and various post-harvest processes. Both inside and outside the classroom. This processing course became a true bonding experience, where we learned and grew together. Here’s to everyone who joined us this January — and to our new, fully certified Post Harvest Processing Professionals! As we prepare for our next @thecqi Q Arabica Processing Professional Course at @dayebensacoffee in Ethiopia, we want to look back on our last visit this past January. It was six immersive days in the Ethiopian highlands, hosted by long-time friends @keneandukamo and the rest of the Dukamo family. Together with Q Instructor @castletonbryce and Archers Head of Education @_daveperalta , our previous QP2 cohort experienced coffee processing in its truest form: walking the farms, observing harvest decisions, and engaging directly with the methods that shape Daye Bensa’s incredible coffees.
