running a hidden wine bar is cooool and all, but the sustainability question is one any business can’t seem to run from.
putting aside the legal status, our ambition has outgrown the space. so does our free labor era.
in order for our dream to keep living on, we need to go bigger.

Les Moulins (Chai de la Dive, France) is Ms. Sunshine, been by the sea a little too long hence a tad salty, completely pleased that iced peach tea is the only refreshment she got as companion
Theodora (Gut Oggau, Austria) is rather a mountain girl — a little quieter in the corner, gentle and fresh-faced at first, but when she speaks, there’s a flicker of spice. so expect to peel onion
Vin Blanc (Clos du Tue-Bœuf, France) is a city girl - cherishes her floral dress and would happily touch grass in an urban park while watching the sun disappears

Nduja, but she’s been to Vietnam and didn’t come back the same — nem chua meets chorizo in a funky little situationship.
Well mixed with tagliatelle and fnished with stracciatella on top, an indulgence that took some convincing for chef @ngt.viet to finally say yes to.

Matassa “Cuvée Alexandria” (Roussillon, France) // muscat of alexandria // orange blossom and apricot on the nose, leading into a gentle citrusy, saline touch — the 3-week skin contact extracted beautiful perfume and structure
Momento Mori “If Only Maybe” (Victoria, Australia) // malvasia, nosiola, vermentino // soft pear, apple, and wild herbs ease into a hazy, rounded palate with delicate funk — lightly macerated and bottled unfiltered for those into the hazy juicy feeling
Dönnhoff Riesling Trocken (Nahe, Germany) // riesling // lime zest and white florals carry through a clean, mineral finish that lingers — stainless steel ferment, trocken (dry) style keeps it precise; predictable yet not boring

Someone wise once said: “Good things take time.” When it’s mole, dear… it takes weeks.
Mole, if you’ve never met it, is a slow-built Mexican sauce — layered with chiles, spices, nuts, sometimes chocolate — and meant to deepen over time, not rush. Ours works like a mother sauce, carried forward week after week, so every batch picks up a little more depth, a little more chaos.
Served with pineapple corn salsa and lime rice till end of April!
